🍽️ Mini Pizzas with Feta, Olives and Orange

Ingredients
- yeast, fresh 21 g
- sugar pinch
- wheat flour, Type 405 300 g
- salt pinch
- olive oil 4 tbsp
- olives, green 100 g
- feta 200 g
- oranges 1 pc.
- radicchio 0.25 pc.
- crème fraîche 200 g
- oregano, dried pinch
- pepper, black ground pinch
- pine nuts 30 g
Instructions
- 1. Crumble the yeast into a bowl.
- 2. Mix the yeast with the sugar and 150 milliliters of lukewarm water.
- 3. Let the mixture rest covered for about 10 minutes.
- 4. Add flour, salt and olive oil.
- 5. Knead everything well.
- 6. Let the dough rise covered in a warm place for approx. 1 hour.
- 7. Preheat the oven to 220 °C (convection).
- 8. Drain the olives.
- 9. Halve the olives.
- 10. Cut the feta into cubes.
- 11. Wash the orange thoroughly.
- 12. Grate about 1 teaspoon of zest finely.
- 13. Peel the orange all around with a sharp knife.
- 14. Remove the white pith as well.
- 15. Cut out the fruit segments from the membranes with V-shaped cuts.
- 16. Quarter the radicchio.
- 17. Remove the core.
- 18. Cut the radicchio into strips.
- 19. Wash the radicchio strips thoroughly.
- 20. Mix the crème fraîche with the grated orange zest.
- 21. Add oregano, salt and pepper.
- 22. Mix the ingredients well.
- 23. Divide the dough into 8 equal portions.
- 24. Roll the portions into small oval flatbreads on a floured surface.
- 25. Line two baking sheets with baking paper.
- 26. Distribute the flatbreads on the trays.
- 27. Spread the crème fraîche mixture on the flatbreads.
- 28. Top the pizzas with olives, feta and pine nuts.
- 29. Bake the pizzas in the oven for about 15 minutes.
- 30. Take the mini pizzas out of the oven.
- 31. Top them with the prepared orange pieces.
- 32. Top them with the radicchio.
