  1. 1. Crumble the yeast into a bowl.
  2. 2. Mix the yeast with the sugar and 150 milliliters of lukewarm water.
  3. 3. Let the mixture rest covered for about 10 minutes.
  4. 4. Add flour, salt and olive oil.
  5. 5. Knead everything well.
  6. 6. Let the dough rise covered in a warm place for approx. 1 hour.
  7. 7. Preheat the oven to 220 °C (convection).
  8. 8. Drain the olives.
  9. 9. Halve the olives.
  10. 10. Cut the feta into cubes.
  11. 11. Wash the orange thoroughly.
  12. 12. Grate about 1 teaspoon of zest finely.
  13. 13. Peel the orange all around with a sharp knife.
  14. 14. Remove the white pith as well.
  15. 15. Cut out the fruit segments from the membranes with V-shaped cuts.
  16. 16. Quarter the radicchio.
  17. 17. Remove the core.
  18. 18. Cut the radicchio into strips.
  19. 19. Wash the radicchio strips thoroughly.
  20. 20. Mix the crème fraîche with the grated orange zest.
  21. 21. Add oregano, salt and pepper.
  22. 22. Mix the ingredients well.
  23. 23. Divide the dough into 8 equal portions.
  24. 24. Roll the portions into small oval flatbreads on a floured surface.
  25. 25. Line two baking sheets with baking paper.
  26. 26. Distribute the flatbreads on the trays.
  27. 27. Spread the crème fraîche mixture on the flatbreads.
  28. 28. Top the pizzas with olives, feta and pine nuts.
  29. 29. Bake the pizzas in the oven for about 15 minutes.
  30. 30. Take the mini pizzas out of the oven.
  31. 31. Top them with the prepared orange pieces.
  32. 32. Top them with the radicchio.
