  1. 1. Whisk the eggs and milk together vigorously in a bowl.
  2. 2. Stir in the flour, baking powder, and a pinch of salt.
  3. 3. Let the batter rest for five minutes.
  4. 4. Wash the lime thoroughly.
  5. 5. Finely grate the lime zest.
  6. 6. Cut the lime in half and squeeze out the juice.
  7. 7. Cut the avocado in half and remove the pit.
  8. 8. Carefully scoop the avocado flesh out of the skin with a spoon.
  9. 9. Dice the avocado flesh into small cubes.
  10. 10. Place the diced avocado into a bowl.
  11. 11. Mix the avocado with the lime juice and lime zest.
  12. 12. Dice the salmon into small pieces as well.
  13. 13. Add the salmon to the avocado mixture.
  14. 14. Season the salsa with salt and pepper to taste.
  15. 15. Heat one tablespoon of oil in a frying pan over medium heat.
  16. 16. Take one tablespoon of batter and fry a small pancake.
  17. 17. Repeat this until you have baked 20 small blinis.
  18. 18. Add a little more oil to the pan if needed.
  19. 19. Place the finished blinis on kitchen paper to absorb excess grease.
  20. 20. Rinse the dill under cold water.
  21. 21. Shake the dill dry.
  22. 22. Pluck the fine dill tips from the stems.
  23. 23. Place the salmon and avocado salsa on top of the blinis.
  24. 24. Garnish the blinis with the dill tips.
  25. 25. Serve the blinis immediately and enjoy!
