🍽️ Tiny Wheat Blinis with Salmon and Avocado Topping

Ingredients
- Eggs 2 pcs.
- Milk 300 ml
- Wheat flour, Type 405 200 g
- Baking powder 1 tsp
- Salt pinch
- Organic limes 1 pcs.
- Avocado 1 pcs.
- Smoked salmon 200 g
- Pepper, black ground pinch
- Sunflower oil 3 tbsp
- Dill, fresh 10 g
Instructions
- 1. Whisk the eggs and milk together vigorously in a bowl.
- 2. Stir in the flour, baking powder, and a pinch of salt.
- 3. Let the batter rest for five minutes.
- 4. Wash the lime thoroughly.
- 5. Finely grate the lime zest.
- 6. Cut the lime in half and squeeze out the juice.
- 7. Cut the avocado in half and remove the pit.
- 8. Carefully scoop the avocado flesh out of the skin with a spoon.
- 9. Dice the avocado flesh into small cubes.
- 10. Place the diced avocado into a bowl.
- 11. Mix the avocado with the lime juice and lime zest.
- 12. Dice the salmon into small pieces as well.
- 13. Add the salmon to the avocado mixture.
- 14. Season the salsa with salt and pepper to taste.
- 15. Heat one tablespoon of oil in a frying pan over medium heat.
- 16. Take one tablespoon of batter and fry a small pancake.
- 17. Repeat this until you have baked 20 small blinis.
- 18. Add a little more oil to the pan if needed.
- 19. Place the finished blinis on kitchen paper to absorb excess grease.
- 20. Rinse the dill under cold water.
- 21. Shake the dill dry.
- 22. Pluck the fine dill tips from the stems.
- 23. Place the salmon and avocado salsa on top of the blinis.
- 24. Garnish the blinis with the dill tips.
- 25. Serve the blinis immediately and enjoy!
