  5. 5. Knead everything into a smooth dough.
  6. 6. Wrap the dough in plastic wrap.
  7. 7. Place the dough in the refrigerator for about 30 minutes.
  8. 8. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  9. 9. Roll out the dough thinly on a floured surface.
  10. 10. Cut circles out of the dough.
  11. 11. Grease 8 small tart molds.
  12. 12. Place the dough circles into the molds.
  13. 13. Form a border about 2 centimeters high.
  14. 14. Weight the dough with dried legumes (such as dried peas or beans).
  15. 15. Bake the tarts for about 15 minutes until golden brown.
  16. 16. Remove the tarts from the oven.
  17. 17. Let them cool for a short while.
  18. 18. Carefully release the dough from the molds.
  19. 19. Let the tarts cool completely on a wire rack.
