🍰 Small Berry Tarts

Ingredients
- wheat flour, Type 405 220 g
- sugar 120 g
- salt pinch
- butter 160 g
- eggs 1 pc.
- oil for greasing 1 tbsp
- milk 500 ml
- vanilla pudding powder 1 packet
- crème fraîche 300 g
- blueberries, fresh 100 g
- strawberries 150 g
- raspberries, fresh 100 g
- powdered sugar 1 tbsp
Instructions
- 1. Mix flour, 80 grams of sugar, and a pinch of salt in a bowl.
- 2. Cut the cold butter into small cubes.
- 3. Add the butter cubes to the flour mixture.
- 4. Add one egg.
- 5. Knead everything into a smooth dough.
- 6. Wrap the dough in plastic wrap.
- 7. Place the dough in the refrigerator for about 30 minutes.
- 8. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 9. Roll out the dough thinly on a floured surface.
- 10. Cut circles out of the dough.
- 11. Grease 8 small tart molds.
- 12. Place the dough circles into the molds.
- 13. Form a border about 2 centimeters high.
- 14. Weight the dough with dried legumes (such as dried peas or beans).
- 15. Bake the tarts for about 15 minutes until golden brown.
- 16. Remove the tarts from the oven.
- 17. Let them cool for a short while.
- 18. Carefully release the dough from the molds.
- 19. Let the tarts cool completely on a wire rack.
- 20. Mix 6 tablespoons of milk with 4 tablespoons of sugar and the vanilla pudding powder in a bowl.
- 21. Bring the remaining milk to a boil in a pot.
- 22. Stir the pudding mixture into the boiling milk.
- 23. Cook the mixture for about 1 minute while stirring constantly.
- 24. Reduce the heat.
- 25. Simmer the pudding for about 4 minutes.
- 26. Cook until the pudding has a thick consistency.
- 27. Let the pudding cool slightly.
- 28. Stir the pudding in the pot with crème fraîche.
- 29. Distribute the filling evenly over the cooled dough bases.
- 30. Store the tarts in the refrigerator until serving.
- 31. Wash the berries.
- 32. Remove the stems if necessary.
- 33. Chop the berries into small pieces if desired.
- 34. Top the tarts with the berries.
- 35. Sprinkle the tarts with powdered sugar.
