🍳 Crispy Mini Quiches with Bacon and Cheese

Ingredients
- onions, red 2 pcs.
- butter 1 tbsp.
- bacon strips 150 g
- heavy cream 300 ml
- Emmental cheese, grated 200 g
- eggs 2 pcs.
- chives, fresh 10 g
- salt pinch
- pepper, black ground pinch
- nutmeg, ground pinch
- puff pastry 1 pcs.
Instructions
- 1. Preheat the oven to 220 degrees Celsius using top and bottom heat.
- 2. Cut the onions in half and dice them into small cubes.
- 3. Heat the butter in a frying pan over medium heat.
- 4. Fry the onions and bacon for about 4 minutes.
- 5. Pour the cream into the pan and reduce the heat to low.
- 6. Stir in the cheese and let it melt for 2 minutes while stirring constantly.
- 7. Remove the pan from the heat and let the mixture cool down slightly.
- 8. Whisk the eggs in a separate bowl.
- 9. Wash the chives and cut them into fine rings.
- 10. Mix the eggs and chives into the cheese mixture.
- 11. Season the filling with salt, pepper, and nutmeg.
- 12. Cut the puff pastry into small rectangles.
- 13. Place the pastry pieces into the muffin tins.
- 14. Fill the pastry bases with the mixture.
- 15. Bake the quiches in the lower part of the oven for 25 to 30 minutes until golden brown.
- 16. Remove the quiches from the oven and let them cool for a moment.
- 17. Carefully release the quiches from the molds.
- 18. Cut them into portions and serve warm.
