  2. 2. Cut the onions in half and dice them into small cubes.
  3. 3. Heat the butter in a frying pan over medium heat.
  4. 4. Fry the onions and bacon for about 4 minutes.
  5. 5. Pour the cream into the pan and reduce the heat to low.
  6. 6. Stir in the cheese and let it melt for 2 minutes while stirring constantly.
  7. 7. Remove the pan from the heat and let the mixture cool down slightly.
  8. 8. Whisk the eggs in a separate bowl.
  9. 9. Wash the chives and cut them into fine rings.
  10. 10. Mix the eggs and chives into the cheese mixture.
  11. 11. Season the filling with salt, pepper, and nutmeg.
  12. 12. Cut the puff pastry into small rectangles.
  13. 13. Place the pastry pieces into the muffin tins.
  14. 14. Fill the pastry bases with the mixture.
  15. 15. Bake the quiches in the lower part of the oven for 25 to 30 minutes until golden brown.
