🍽️ Mini potato dumplings with chanterelle spinach cream

Ingredients
- yellow onions 1 pc
- baby spinach 200 g
- chanterelles 500 g
- salt pinch
- mini dumplings 800 g
- butter 4 tbsp
- breadcrumbs 3 tbsp
- oil 2 tbsp
- whipping cream 400 ml
- pepper, black ground pinch
- nutmeg, ground 0.25 tsp
Instructions
- 1. Halve the onions and peel them. Dice the onions finely. Wash the spinach thoroughly. Let the spinach drain well. Clean the chanterelles carefully. Cut large chanterelles in half lengthwise.
- 2. Bring about 5 liters of salted water to a boil in a large pot. Add the potato dumplings to the boiling salted water. Cook the dumplings without a lid for about 12 minutes. Ensure the water does not boil vigorously but simmers gently. Remove the dumplings with a slotted spoon. Let them drain. Place them on a plate and set aside.
- 3. Heat 2 tablespoons of butter in a pan over medium heat. Toast the breadcrumbs in the butter for about 2 minutes until golden brown. Remove the toasted butter crumbs from the pan. Place them on a plate. Wipe the pan clean.
- 4. Heat 2 tablespoons of oil in the same pan over high heat. Sauté the onions and chanterelles for about 5 minutes. Deglaze the pan with cream. Bring the sauce to a brief boil. Add the drained spinach to the pan. Let the spinach wilt. Remove the pan from the heat. Season the sauce with salt, pepper, and nutmeg to taste.
- 5. Heat 2 tablespoons of butter in another pan over medium to high heat. Fry the potato dumplings in it for about 2 minutes until golden brown. Shake the pan regularly while doing so. Add the toasted butter crumbs to the dumplings. Toss everything well. Season the dumplings lightly with salt.
- 6. Serve the golden-brown mini potato dumplings on plates. Add the chanterelle spinach cream sauce. Enjoy your meal! Tip: Chanterelles can hold a lot of dirt in their gills. Therefore, wash them unlike many other mushrooms. However, keep the contact time with water as short as possible, as they will absorb too much liquid otherwise. Stir 2 to 3 tablespoons of flour into the washing water to bind the dirt. Rinse the mushrooms afterwards. Let them dry on kitchen paper for about 5 minutes.
