  1. 1. Put flour, water, salt and 3 tablespoons of oil into a bowl.
  2. 2. Knead the ingredients into a smooth dough.
  3. 3. Wrap the dough in cling film.
  4. 4. Let the dough rest at room temperature.
  5. 5. Preheat the oven to 250 degrees Celsius with top and bottom heat.
  6. 6. Wash the grapes.
  7. 7. Halve the grapes if they are large.
  8. 8. Halve the onion and peel it.
  9. 9. Cut the onion into thin strips.
  10. 10. Wash the thyme and shake it dry.
  11. 11. Strip the thyme leaves from the stems.
  12. 12. Chop the nuts coarsely.
  13. 13. Put the grapes, onions, thyme and nuts into a bowl.
  14. 14. Add 1 tablespoon of oil, salt and pepper.
  15. 15. Mix everything well together.
  16. 16. Divide the dough into 8 equal pieces.
  17. 17. Dust the work surface with flour.
  18. 18. Roll each piece of dough into a thin flatbread.
  19. 19. Place the flatbreads on two baking sheets lined with baking paper.
  20. 20. Brush each flatbread with 1 tablespoon of sour cream.
  21. 21. Top the flatbreads with the grape and onion mixture.
  22. 22. Bake the mini flammkuchen in the oven for 12 to 15 minutes.
  23. 23. Take the flammkuchen out when they are golden brown.
  24. 24. Drizzle the hot flammkuchen with honey.
  25. 25. Serve the winzerfladen lukewarm or cold.
