🍽️ Crispy Mini Flammkuchen with Beetroot and Goat Cheese

Ingredients
- Wheat flour, Type 405 450 g
- Water 200 ml
- Salt 1 tsp
- Olive oil 4 tbsp
- Beetroot, pre-cooked 250 g
- Spring onions 4 pcs
- Lemons 1 pc
- Walnut kernels 4 tbsp
- Sugar 4 tbsp
- Fresh goat cheese 200 g
- Pepper, black ground pinch
Instructions
- 1. Preheat the oven to 225 degrees Celsius with fan setting.
- 2. Add flour, water, salt, and oil to a bowl.
- 3. Stir the ingredients until you have a smooth dough.
- 4. Shape the dough into a ball.
- 5. Cover the dough ball with a kitchen towel.
- 6. Let the dough rest for 15 minutes.
- 7. Slice the beetroot into thin rounds.
- 8. Wash the spring onions thoroughly.
- 9. Shake the spring onions dry.
- 10. Trim off the tough root ends of the spring onions.
- 11. Slice the spring onions into thin rings.
- 12. Rinse the lemon under hot water.
- 13. Grate about one teaspoon of lemon zest.
- 14. Cut the lemon in half.
- 15. Squeeze the juice out of the lemon.
- 16. Heat a frying pan over high heat.
- 17. Roast the walnuts in the pan for about 2 minutes.
- 18. Sprinkle sugar over the walnuts.
- 19. Caramelize the walnuts for another 2 minutes.
- 20. Remove the walnuts from the pan.
- 21. Lightly salt the walnuts.
- 22. Let the walnuts cool down slightly.
- 23. Chop the walnuts coarsely.
- 24. Place the goat cream cheese into a bowl.
- 25. Stir the goat cheese cream until smooth.
- 26. Add the lemon zest to the cheese cream.
- 27. Add the lemon juice to the cheese cream.
- 28. Season the cream with salt and pepper.
- 29. Taste the cream and adjust seasoning if needed.
- 30. Divide the dough into 8 equal portions.
- 31. Dust some flour onto your work surface.
- 32. Roll each dough portion into a thin circle.
- 33. Line a baking tray with baking paper.
- 34. Place the dough circles onto the tray.
- 35. Spread the goat cheese cream over the dough circles.
- 36. Top the flammkuchen with the beetroot slices.
- 37. Sprinkle the spring onion rings over the top.
- 38. Place the tray into the preheated oven.
- 39. Bake the mini flammkuchen for 10 to 12 minutes.
- 40. Remove the flammkuchen from the oven.
- 41. Sprinkle the caramelized walnuts over the top.
- 42. Serve the flammkuchen immediately.
