  1. 1. Warm the milk in a pot for about 1 minute until it is lukewarm.
  2. 2. Crumble the yeast into a bowl.
  3. 3. Dissolve the yeast together with 1 tablespoon of sugar in the warm milk.
  4. 4. Cover the bowl with a clean kitchen towel.
  5. 5. Let the dough rest for about 15 minutes.
  6. 6. Mix the remaining sugar, flour, salt, and cubed butter in a separate bowl.
  7. 7. Add the yeast milk and the egg to the flour mixture.
  8. 8. Knead everything into a smooth dough.
  9. 9. Cover the bowl again.
  10. 10. Let the dough rise in a warm place for about 1 hour.
  11. 11. Wait until the volume of the dough has approximately doubled.
  12. 12. Roll out the dough on a floured surface to a thickness of about 1.5 cm.
  13. 13. Cut circles (approx. 4 cm diameter) out of the dough using a cutter.
  14. 14. Remove a smaller circle from the center of each circle.
  15. 15. Heat the frying oil in a pot.
  16. 16. Test the oil temperature by dipping a wooden spoon handle; bubbles should rise.
  17. 17. Fry the donuts in batches for approx. 2-3 minutes on both sides.
  18. 18. Remove the donuts when they are golden yellow.
  19. 19. Let the donuts drain on kitchen paper.
  20. 20. Let the donuts cool completely.
  21. 21. Bring about 1 liter of water to a boil in a pot.
  22. 22. Chop the chocolate.
  23. 23. Melt the chocolate in a metal bowl over the hot water (bain-marie).
  24. 24. Dip one side of the cooled donuts into the melted chocolate.
  25. 25. Let the excess chocolate drip off well.
  26. 26. Decorate the donuts with sugar pearls.
  27. 27. Let the chocolate dry on the donuts.
  28. 28. Serve the finished mini donuts.
