🍰 Crispy Mini Donuts with Chocolate Glaze

Ingredients
- Milk 200 ml
- Yeast, fresh 0.5 pc.
- Sugar 70 g
- Wheat flour, Type 405 400 g
- Salt pinch
- butter 50 g
- Eggs 1 pc.
- Rapeseed oil 1 L
- Chocolate, dark 100 g
- Sugar pearls 50 g
Instructions
- 1. Warm the milk in a pot for about 1 minute until it is lukewarm.
- 2. Crumble the yeast into a bowl.
- 3. Dissolve the yeast together with 1 tablespoon of sugar in the warm milk.
- 4. Cover the bowl with a clean kitchen towel.
- 5. Let the dough rest for about 15 minutes.
- 6. Mix the remaining sugar, flour, salt, and cubed butter in a separate bowl.
- 7. Add the yeast milk and the egg to the flour mixture.
- 8. Knead everything into a smooth dough.
- 9. Cover the bowl again.
- 10. Let the dough rise in a warm place for about 1 hour.
- 11. Wait until the volume of the dough has approximately doubled.
- 12. Roll out the dough on a floured surface to a thickness of about 1.5 cm.
- 13. Cut circles (approx. 4 cm diameter) out of the dough using a cutter.
- 14. Remove a smaller circle from the center of each circle.
- 15. Heat the frying oil in a pot.
- 16. Test the oil temperature by dipping a wooden spoon handle; bubbles should rise.
- 17. Fry the donuts in batches for approx. 2-3 minutes on both sides.
- 18. Remove the donuts when they are golden yellow.
- 19. Let the donuts drain on kitchen paper.
- 20. Let the donuts cool completely.
- 21. Bring about 1 liter of water to a boil in a pot.
- 22. Chop the chocolate.
- 23. Melt the chocolate in a metal bowl over the hot water (bain-marie).
- 24. Dip one side of the cooled donuts into the melted chocolate.
- 25. Let the excess chocolate drip off well.
- 26. Decorate the donuts with sugar pearls.
- 27. Let the chocolate dry on the donuts.
- 28. Serve the finished mini donuts.
