  1. 1. Take the merguez sausages out of the fridge to let them reach room temperature.
  2. 2. Cut a red onion in half and remove the outer skin.
  3. 3. Slice the onion into very thin strips.
  4. 4. Wash a lemon thoroughly and cut it in half.
  5. 5. Squeeze the juice out of the lemon.
  6. 6. Add one tablespoon of lemon juice and half a tablespoon of sugar to a small bowl.
  7. 7. Stir the mixture until the sugar is completely dissolved.
  8. 8. Add the onion strips to the lemon-sugar mixture.
  9. 9. Mix everything well so the onions absorb the flavor.
  10. 10. Set the bowl aside to let the onions marinate.
  11. 11. Put yogurt into a separate bowl.
  12. 12. Add a little of the remaining lemon juice.
  13. 13. Season the yogurt with salt and pepper to taste.
  14. 14. Set the yogurt mixture aside as well.
  15. 15. Take a block of feta cheese and crumble it into small pieces with your hands.
  16. 16. Wash fresh mint and shake it dry.
  17. 17. Pluck the mint leaves off the stems.
  18. 18. Chop the mint leaves finely.
  19. 19. Preheat your grill.
  20. 20. Grill the merguez sausages on all sides for about five to six minutes until crispy.
  21. 21. Brush pita breads on both sides with a little oil.
  22. 22. Place the breads on the hot edge of the grill.
  23. 23. Grill the breads for two to three minutes until golden brown.
  24. 24. Take the finished sausages and breads off the grill.
  25. 25. Serve the merguez with the marinated onions, yogurt, feta, and mint.
