🍳 Menemen with Sucuk

Ingredients
- yellow onions 1 pc.
- red bell peppers 2 pc.
- yellow bell peppers 1 pc.
- sucuk garlic sausage 300 g
- oil 2 tbsp
- chopped tomatoes 250 g
- ground chili pinch
- salt pinch
- sugar pinch
- fresh parsley 20 g
- eggs 4 pc.
- ground black pepper pinch
Instructions
- 1. Halve the onions and peel off the outer skin. Cut the onions into fine cubes.
- 2. Wash the peppers thoroughly under running water. Remove the green stem and seeds. Cut the peppers into fine strips.
- 3. Remove the sucuk sausage from its packaging. Cut the sausage into small cubes.
- 4. Heat oil in a pan over medium heat.
- 5. Add the onion cubes and sucuk cubes to the hot pan.
- 6. Fry the vegetables and sausage for about five minutes until they are golden brown.
- 7. Add the pepper strips to the pan.
- 8. Fry the peppers for about three minutes.
- 9. Add the chopped tomatoes to the pan.
- 10. Season the mixture with chili, salt, and a pinch of sugar.
- 11. Cover the pan with a lid.
- 12. Let the menemen simmer on low to medium heat for about five minutes.
- 13. Stir the mixture once in between.
- 14. Wash the parsley thoroughly under running water.
- 15. Pat the parsley dry with a kitchen towel.
- 16. Remove the coarse stems from the parsley.
- 17. Chop the parsley coarsely.
- 18. Turn the heat in the pan to low.
- 19. Press four indentations into the vegetable mixture with a spoon.
- 20. Crack the eggs.
- 21. Carefully slide the eggs into the indentations.
- 22. Cover the pan with the lid again.
- 23. Let the eggs set for another five to seven minutes.
- 24. Season the menemen to taste with salt and pepper.
- 25. Sprinkle the chopped parsley over the dish.
- 26. Serve the menemen ideally directly from the pan.
