🥤 Melonensorbet with Mint

Ingredients
- lemon 1 pc.
- water 80 ml
- sugar 80 g
- mint, fresh 18 g
- watermelon 500 g
- honeydew melon 1 pc.
- dry sparkling wine 400 ml
Instructions
- 1. Cut the lemon in half and squeeze out the juice. In a pot, heat the water and sugar over medium heat and boil for about 5 minutes until the mixture is clear. Add the lemon juice and let it cool.
- 2. Wash the mint thoroughly, pat dry, pluck the leaves from the stems, and chop finely. Cut the melons in half, remove the seeds, peel, and puree in a tall container using an immersion blender. Mix the mint and sugar syrup into the melon puree and pour into a shallow dish.
- 3. Place the mixture in the freezer compartment and let it freeze until ice crystals form. Loosen the sorbet with a fork and repeat this process several times until the entire sorbet is frozen.
- 4. Blend the melon sorbet with mint using an immersion blender, divide into portions, arrange in a glass, top up with sparkling wine, and serve. Enjoy!
