  1. 1. Cut the lemon in half and squeeze out the juice. In a pot, heat the water and sugar over medium heat and boil for about 5 minutes until the mixture is clear. Add the lemon juice and let it cool.
  2. 2. Wash the mint thoroughly, pat dry, pluck the leaves from the stems, and chop finely. Cut the melons in half, remove the seeds, peel, and puree in a tall container using an immersion blender. Mix the mint and sugar syrup into the melon puree and pour into a shallow dish.
  3. 3. Place the mixture in the freezer compartment and let it freeze until ice crystals form. Loosen the sorbet with a fork and repeat this process several times until the entire sorbet is frozen.
  4. 4. Blend the melon sorbet with mint using an immersion blender, divide into portions, arrange in a glass, top up with sparkling wine, and serve. Enjoy!
