  1. 1. In a pot, bring the vanilla sugar and water to a boil and simmer for about 3 minutes, then set aside to cool.
  2. 2. Cut the honeydew melon in half and remove the seeds. Cut the watermelon in half as well. Using a melon baller or spoon, form about 200 g of watermelon and 100 g of honeydew melon pieces into balls and chill. Remove the remaining fruit flesh, making sure to remove the watermelon seeds.
  3. 3. Puree the melon flesh in a tall container. Mix with vodka and vanilla syrup and chill for about 2 hours.
  4. 4. Pour the melon-vodka mix into a large punch bowl. Before serving, top up with chilled sparkling wine and garnish with the melon balls. Cheers! Tip: If you like, you can serve the punch in the hollowed-out watermelon half.
