🍲 Quick Seafood Soup

Ingredients
- frozen seafood mix 900 g
- yellow onions 2 pcs
- garlic cloves 2 pcs
- oil 2 tbsp
- dry white wine 250 ml
- chopped tomatoes 800 g
- salt pinch
- black ground pepper pinch
- sugar pinch
- dried bay leaves 1 pcs
- fresh parsley 40 g
- baguette 1 pcs
Instructions
- 1. Thaw the seafood overnight in the refrigerator.
- 2. Halve the onions and remove the skin.
- 3. Dice the onions into small cubes.
- 4. Peel the garlic.
- 5. Finely chop the garlic.
- 6. Heat the oil in a pot over high heat.
- 7. Add the onions and garlic to the pot.
- 8. Sauté the vegetables for about 2 minutes.
- 9. Deglaze the mixture with white wine.
- 10. Let the wine reduce for about 2 minutes.
- 11. Add the chopped tomatoes to the soup.
- 12. Season with salt, pepper, and sugar.
- 13. Add a bay leaf to the soup.
- 14. Let the soup simmer gently.
- 15. Rinse the seafood thoroughly.
- 16. Pat the seafood dry.
- 17. Add the seafood to the soup.
- 18. Reduce the heat to low to medium.
- 19. Cover the pot with a lid.
- 20. Cook the soup for about 10 minutes.
- 21. Wash the parsley.
- 22. Dry the parsley.
- 23. Pluck the parsley leaves from the stems.
- 24. Chop the parsley leaves roughly.
- 25. Taste the soup and adjust seasoning if needed.
- 26. Serve the soup with baguette and the fresh parsley.
