🍽️ Mediterranean Oven Vegetables with Feta

Ingredients
- Aubergines 2 pcs
- Zucchini 2 pcs
- Sweet peppers 2 pcs
- Garlic cloves 1 pcs
- Thyme, fresh 20 g
- Olive oil 4 tbsp
- Salt pinch
- Pepper, black ground pinch
- feta 400 g
- Spinach 200 g
Instructions
- 1. Preheat the oven to 200 °C (top/bottom heat). Wash the aubergines and zucchini thoroughly, trim the ends, and cut into approx. 1 cm cubes. Clean the peppers, remove the seeds and stems, and cut into approx. 1 cm pieces. Peel the garlic and chop coarsely.
- 2. Rinse the thyme, shake off excess water, strip the leaves from the stems, and chop finely. In a bowl, mix the vegetables with half of the thyme and garlic, 3 tbsp olive oil, salt, and pepper.
- 3. Distribute the vegetables evenly on a baking sheet. Pat the feta dry and crumble it over the vegetables, then bake everything in the oven for approx. 20–25 minutes.
- 4. Wash the spinach thoroughly and dry it in a salad spinner. Heat 1 tbsp olive oil in a pan over medium heat and sauté the spinach with the remaining thyme and garlic for approx. 2 minutes until the spinach has wilted. Season with salt and pepper.
- 5. Take the oven vegetables with feta out of the oven, plate them with the spinach, and serve. Enjoy your meal!
