  1. 1. Preheat the oven to 200 °C (top/bottom heat). Wash the aubergines and zucchini thoroughly, trim the ends, and cut into approx. 1 cm cubes. Clean the peppers, remove the seeds and stems, and cut into approx. 1 cm pieces. Peel the garlic and chop coarsely.
  2. 2. Rinse the thyme, shake off excess water, strip the leaves from the stems, and chop finely. In a bowl, mix the vegetables with half of the thyme and garlic, 3 tbsp olive oil, salt, and pepper.
  3. 3. Distribute the vegetables evenly on a baking sheet. Pat the feta dry and crumble it over the vegetables, then bake everything in the oven for approx. 20–25 minutes.
  4. 4. Wash the spinach thoroughly and dry it in a salad spinner. Heat 1 tbsp olive oil in a pan over medium heat and sauté the spinach with the remaining thyme and garlic for approx. 2 minutes until the spinach has wilted. Season with salt and pepper.
  5. 5. Take the oven vegetables with feta out of the oven, plate them with the spinach, and serve. Enjoy your meal!
