  1. 1. Thaw the salmon fillets overnight in the refrigerator. Peel the potatoes, wash them, and cut them into coarse cubes. Bring to a boil in a pot with salted water and cook covered over medium heat for about 20 minutes.
  2. 2. Meanwhile, drain the olives. Wash the rosemary, shake it dry, strip the needles from the stems, and chop finely. Halve the onions, peel them, and cut them into strips. Drain the potatoes and let them steam dry for a moment.
  3. 3. Heat a pan with butter on the highest setting, add the onions first and then the potatoes, and fry golden brown for about 10 minutes, stirring constantly. Mix the olives and rosemary into the potatoes, season with salt and pepper, and keep warm until serving.
  4. 4. Rinse the salmon fillets and pat them dry with kitchen paper. Heat a pan with oil on the highest setting, place the salmon fillets in it, and fry for about 5 minutes.
  5. 5. Sprinkle the salmon fillets with herbs of Provence and chili, and season with salt and pepper. Place the fried potatoes in a bowl and serve together with the Mediterranean salmon fillets. Enjoy your meal!
