🍽️ Oven Chicken with Mediterranean Vegetables

Ingredients
- Cherry tomatoes 500 g
- Zucchini 2 pcs.
- Potatoes, waxy 1 kg
- Garlic cloves 1 pc.
- Olive oil 2 tbsp
- Salt pinch
- Pepper, black ground pinch
- Herbs of Provence, dried 2 tbsp
- Herb butter 50 g
- Chicken breast fillets 600 g
Instructions
- 1. Turn on the oven to 200 degrees Celsius with top and bottom heat.
- 2. Rinse the tomatoes under running water.
- 3. Trim the ends of the zucchini and slice it into rounds.
- 4. Wash the potatoes thoroughly and cut them into wedges.
- 5. Crush the garlic cloves flat using the side of a knife.
- 6. Place the prepared vegetables on a baking sheet.
- 7. Drizzle olive oil over the vegetables.
- 8. Season the vegetables with salt, pepper, and Herbes de Provence.
- 9. Place the tray in the oven and bake the vegetables for 15 minutes.
- 10. Cut the herb butter into small pieces.
- 11. Rinse the chicken and pat it dry with paper towels.
- 12. Season the chicken with salt and pepper.
- 13. Take the tray out of the oven.
- 14. Place the chicken among the vegetables on the tray.
- 15. Distribute the pieces of herb butter on top of the chicken.
- 16. Place the tray back into the oven.
- 17. Bake the chicken for another 15 minutes until it is fully cooked.
- 18. Serve the finished dish on plates.
