🍽️ Baked Chicken with Mediterranean Vegetables

Ingredients
- chicken breast fillets 600 g
- oil 5 tbsp
- herbs of Provence, dried 2 tsp
- onions, yellow 1 pc
- zucchini 2 pc
- pepper, green 2 pc
- garlic cloves 1 pc
- parmesan 100 g
- salt pinch
- pepper, black ground pinch
- tomatoes, chopped 400 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius using top and bottom heat.
- 2. Rinse the chicken meat under cold water and pat it dry with a kitchen towel.
- 3. Cut each chicken breast lengthwise into two thin pieces.
- 4. Place the meat in a bowl and mix it with two tablespoons of oil and the Herbs de Provence.
- 5. Cut an onion in half and remove the outer skin.
- 6. Dice the peeled onion into small cubes.
- 7. Wash a zucchini and cut off the hard ends.
- 8. Cut the zucchini in half lengthwise and then slice it into thin rounds.
- 9. Wash a bell pepper, cut it in half, and remove the inside with the seeds.
- 10. Cut the bell pepper halves into thin strips.
- 11. Peel a clove of garlic and chop it very finely.
- 12. Grate some Parmesan cheese finely.
- 13. Season the marinated chicken generously with salt and black pepper.
- 14. Heat one tablespoon of oil in a large frying pan over medium to high heat.
- 15. Fry the chicken meat on all sides for about four minutes until golden brown.
- 16. Remove the meat from the pan and place it on a plate.
- 17. Add another two tablespoons of oil to the same pan and heat it.
- 18. Fry the onion cubes, chopped garlic, zucchini slices, and pepper strips for about five minutes.
- 19. Add the chopped tomatoes to the pan with the vegetables.
- 20. Adjust the seasoning of the tomato sauce with salt and pepper to taste.
- 21. Pour the tomato sauce into a baking dish.
- 22. Place the fried chicken meat on top of the sauce in the dish.
- 23. Generously sprinkle the grated Parmesan over the chicken.
- 24. Place the baking dish in the preheated oven and bake the dish for about ten minutes.
- 25. Remove the chicken from the oven and serve it hot.
