  1. 1. Preheat the oven to 180 degrees Celsius using top and bottom heat.
  2. 2. Rinse the chicken meat under cold water and pat it dry with a kitchen towel.
  3. 3. Cut each chicken breast lengthwise into two thin pieces.
  4. 4. Place the meat in a bowl and mix it with two tablespoons of oil and the Herbs de Provence.
  5. 5. Cut an onion in half and remove the outer skin.
  6. 6. Dice the peeled onion into small cubes.
  7. 7. Wash a zucchini and cut off the hard ends.
  8. 8. Cut the zucchini in half lengthwise and then slice it into thin rounds.
  9. 9. Wash a bell pepper, cut it in half, and remove the inside with the seeds.
  10. 10. Cut the bell pepper halves into thin strips.
  11. 11. Peel a clove of garlic and chop it very finely.
  12. 12. Grate some Parmesan cheese finely.
  13. 13. Season the marinated chicken generously with salt and black pepper.
  14. 14. Heat one tablespoon of oil in a large frying pan over medium to high heat.
  15. 15. Fry the chicken meat on all sides for about four minutes until golden brown.
  16. 16. Remove the meat from the pan and place it on a plate.
  17. 17. Add another two tablespoons of oil to the same pan and heat it.
  18. 18. Fry the onion cubes, chopped garlic, zucchini slices, and pepper strips for about five minutes.
  19. 19. Add the chopped tomatoes to the pan with the vegetables.
  20. 20. Adjust the seasoning of the tomato sauce with salt and pepper to taste.
  21. 21. Pour the tomato sauce into a baking dish.
  22. 22. Place the fried chicken meat on top of the sauce in the dish.
  23. 23. Generously sprinkle the grated Parmesan over the chicken.
  24. 24. Place the baking dish in the preheated oven and bake the dish for about ten minutes.
  25. 25. Remove the chicken from the oven and serve it hot.
