🍲 Cozy Mediterranean Pasta Stew

Ingredients
- red onions 1 pc
- garlic cloves 2 pc
- celery stalks 1 pc
- thyme, fresh 5 g
- rosemary, fresh 5 g
- olives, black 100 g
- zucchini 1 pc
- oil 3 tbsp
- tomato paste 4 tbsp
- sweet paprika 1 tsp
- tomatoes, chopped 500 g
- vegetable broth 500 ml
- fusilli 300 g
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Cut the onion in half and peel it. Dice the onion into small cubes.
- 2. Peel the garlic and chop it very finely.
- 3. Wash the celery stalk and slice it into thin rounds.
- 4. Set aside a few leaves from the green celery tops for garnish.
- 5. Wash the thyme and rosemary and shake off excess water.
- 6. Strip the leaves from the tough stems and chop the herbs finely.
- 7. Drain the olives in a sieve and let them drip dry.
- 8. Chop the olives into coarse pieces if they are large.
- 9. Wash the zucchini and trim off the hard ends.
- 10. Cut the zucchini in half lengthwise and slice it.
- 11. Heat 2 tablespoons of oil in a large pot over medium heat.
- 12. Add the onions, garlic, and celery to the pot.
- 13. Sauté the vegetables for about 4 minutes until soft and translucent.
- 14. Stir in the tomato paste and paprika powder.
- 15. Fry the spices for about 1 minute to release their flavors.
- 16. Deglaze the mixture with the chopped tomatoes and broth.
- 17. Add the chopped herbs and olives to the pot.
- 18. Simmer the stew with the lid on for about 15 minutes.
- 19. Add the fusilli pasta after about 5 minutes of cooking time.
- 20. Heat 1 tablespoon of oil in a frying pan over high heat.
- 21. Fry the zucchini slices for about 5 minutes until golden brown.
- 22. Season the zucchini with salt and pepper.
- 23. Set the zucchini aside until the stew is ready.
- 24. Stir the fried zucchini into the finished stew.
- 25. Finally, adjust the seasoning of the stew with salt and pepper.
- 26. Serve the stew in deep bowls.
- 27. Garnish the plates with the reserved celery greens.
