  1. 1. Cut the onion in half and peel it. Dice the onion into small cubes.
  2. 2. Peel the garlic and chop it very finely.
  3. 3. Wash the celery stalk and slice it into thin rounds.
  4. 4. Set aside a few leaves from the green celery tops for garnish.
  5. 5. Wash the thyme and rosemary and shake off excess water.
  6. 6. Strip the leaves from the tough stems and chop the herbs finely.
  7. 7. Drain the olives in a sieve and let them drip dry.
  8. 8. Chop the olives into coarse pieces if they are large.
  9. 9. Wash the zucchini and trim off the hard ends.
  10. 10. Cut the zucchini in half lengthwise and slice it.
  11. 11. Heat 2 tablespoons of oil in a large pot over medium heat.
  12. 12. Add the onions, garlic, and celery to the pot.
  13. 13. Sauté the vegetables for about 4 minutes until soft and translucent.
  14. 14. Stir in the tomato paste and paprika powder.
  15. 15. Fry the spices for about 1 minute to release their flavors.
  16. 16. Deglaze the mixture with the chopped tomatoes and broth.
  17. 17. Add the chopped herbs and olives to the pot.
  18. 18. Simmer the stew with the lid on for about 15 minutes.
  19. 19. Add the fusilli pasta after about 5 minutes of cooking time.
  20. 20. Heat 1 tablespoon of oil in a frying pan over high heat.
  21. 21. Fry the zucchini slices for about 5 minutes until golden brown.
  22. 22. Season the zucchini with salt and pepper.
  23. 23. Set the zucchini aside until the stew is ready.
  24. 24. Stir the fried zucchini into the finished stew.
  25. 25. Finally, adjust the seasoning of the stew with salt and pepper.
  26. 26. Serve the stew in deep bowls.
  27. 27. Garnish the plates with the reserved celery greens.
