  1. 1. Ideally, thaw the salmon overnight in the refrigerator.
  2. 2. Preheat the oven to 170 degrees Celsius with top and bottom heat.
  3. 3. Drain the olives well in a sieve.
  4. 4. Wash the zucchini thoroughly and cut off the ends.
  5. 5. Slice the zucchini.
  6. 6. Mix the zucchini slices in a bowl with oil, salt, and herbs de Provence.
  7. 7. Place the seasoned zucchini and the olives into a baking dish.
  8. 8. Rinse the salmon and pat it dry with a kitchen towel.
  9. 9. Season the salmon with salt.
  10. 10. Cut the lemon in half.
  11. 11. Slice one half of the lemon into thin slices.
  12. 12. Cut the other half of the lemon into wedges.
  13. 13. Place the lemon slices on top of the salmon.
  14. 14. Place the salmon together with the vegetables into the dish.
  15. 15. Bake the dish in the oven for about 20 minutes.
  16. 16. Carefully remove the salmon from the oven.
  17. 17. Garnish the salmon with the lemon wedges.
