🍽️ Oven Salmon with Zucchini and Olives

Ingredients
- salmon fillet, frozen 600 g
- olives, black 60 g
- zucchini 4 pcs.
- oil 3 tbsp
- salt pinch
- herbs of Provence, dried 1 tbsp
- lemons 1 pcs.
Instructions
- 1. Ideally, thaw the salmon overnight in the refrigerator.
- 2. Preheat the oven to 170 degrees Celsius with top and bottom heat.
- 3. Drain the olives well in a sieve.
- 4. Wash the zucchini thoroughly and cut off the ends.
- 5. Slice the zucchini.
- 6. Mix the zucchini slices in a bowl with oil, salt, and herbs de Provence.
- 7. Place the seasoned zucchini and the olives into a baking dish.
- 8. Rinse the salmon and pat it dry with a kitchen towel.
- 9. Season the salmon with salt.
- 10. Cut the lemon in half.
- 11. Slice one half of the lemon into thin slices.
- 12. Cut the other half of the lemon into wedges.
- 13. Place the lemon slices on top of the salmon.
- 14. Place the salmon together with the vegetables into the dish.
- 15. Bake the dish in the oven for about 20 minutes.
- 16. Carefully remove the salmon from the oven.
- 17. Garnish the salmon with the lemon wedges.
