  1. 1. Thoroughly wash the basil under running water.
  2. 2. Dry the basil leaves with a kitchen towel.
  3. 3. Carefully separate the basil leaves from the stems.
  4. 4. Rinse the pork schnitzels under cold water.
  5. 5. Dry the schnitzels with a kitchen towel.
  6. 6. Pound the schnitzels flat by striking them evenly with the bottom of a saucepan handle.
  7. 7. Season the schnitzels with salt and pepper.
  8. 8. Place two basil leaves on each schnitzel.
  9. 9. Place a slice of Parma ham on top of the basil leaves.
  10. 10. Secure the layers with a toothpick.
  11. 11. Heat 1 tablespoon of oil in a frying pan.
  12. 12. Fry the schnitzels first on the meat side for about 3 minutes.
  13. 13. Turn the schnitzels and fry them for another 2 minutes.
  14. 14. Serve the Mediterranean pork schnitzels on plates.
