  1. 1. Peel the garlic and chop it very finely.
  2. 2. Put the tomato paste into a bowl.
  3. 3. Add the chopped garlic.
  4. 4. Add the Herbs de Provence to the bowl.
  5. 5. Season the mixture with salt.
  6. 6. Season the mixture with pepper.
  7. 7. Add a little sugar.
  8. 8. Mix all ingredients in the bowl thoroughly.
  9. 9. Rinse the meat steaks under cold water.
  10. 10. Pat the steaks dry with a kitchen towel.
  11. 11. Place a steak between two layers of cling film.
  12. 12. Gently pound the meat flat until it is thin.
  13. 13. Use the cling film to avoid tearing the meat.
  14. 14. Spread the tomato paste mixture over one side of the flat steak.
  15. 15. Place a slice of ham on the coated side.
  16. 16. Turn the steak so that the ham is facing downwards.
  17. 17. Roll the steak up tightly.
  18. 18. Secure the roll with a toothpick.
  19. 19. Put the oil into a frying pan.
  20. 20. Heat the oil over medium heat.
  21. 21. Place the ham rolls into the hot pan.
  22. 22. Fry the rolls for about 5 minutes on all sides.
  23. 23. Remove the pan from the stove.
  24. 24. Cover the pan.
  25. 25. Let the meat rest for about 3 minutes in the hot pan.
  26. 26. Then serve the rolls.
