🍽️ Oven Chicken Breast with Mediterranean Olives

Ingredients
- chicken breast fillets 600 g
- lemons 1 pc.
- garlic cloves 2 pc.
- rosemary, fresh 5 g
- thyme, fresh 5 g
- olive oil 4 tbsp
- salt pinch
- pepper, black ground pinch
- olives, green 300 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Wash the chicken breasts thoroughly and pat them dry with a kitchen towel.
- 3. Wash the lemon and slice it into thin rounds.
- 4. Press the garlic clove lightly with the flat side of a knife to open it up.
- 5. Wash the rosemary and thyme sprigs and shake off excess water.
- 6. Place the lemon slices, chicken breasts, herbs, and garlic on a baking sheet.
- 7. Drizzle everything generously with olive oil.
- 8. Season the dish with salt and pepper to taste.
- 9. Place the tray in the oven and bake the chicken breast for about 15 minutes.
- 10. Meanwhile, put the olives in a sieve to drain well.
- 11. Gently crush the olives slightly with a knife or spoon so they split open a bit.
- 12. Remove the baking sheet from the oven after 15 minutes.
- 13. Distribute the prepared olives evenly over the chicken on the tray.
- 14. Place the tray back in the oven and bake everything for another 10 minutes.
- 15. Carefully remove the finished dish from the oven.
- 16. Plate the chicken breasts with the olives.
- 17. Add a final splash of olive oil and serve the dish hot.
