🍽️ Mediterranean Stuffed Rolls

Ingredients
- potatoes, mainly waxy 125 g
- salt pinch
- pine nuts 2 tbsp
- basil, fresh 20 g
- wheat flour, Type 405 300 g
- dried yeast 7 g
- brown sugar 0.5 tsp
- bell pepper, red 1 pc
- mozzarella 1 pc
- parmesan 40 g
- parma ham 50 g
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Place the potatoes in a pot with salted water.
- 3. Cook the potatoes for about 25 minutes until they are soft.
- 4. Drain the water and let the potatoes cool down.
- 5. Mash the cooled potatoes finely using a potato ricer or a masher.
- 6. Roughly chop the pine nuts.
- 7. Rinse the basil and shake off the excess water.
- 8. Pluck the basil leaves from the stems.
- 9. Finely chop the basil leaves.
- 10. Add flour, ½ teaspoon of salt, yeast, sugar, the chopped basil, and the pine nuts to the potatoes.
- 11. Pour in about 150 milliliters of lukewarm water.
- 12. Knead everything into a smooth dough.
- 13. Cover the dough.
- 14. Let the dough rise in a warm place for about 1 hour until it has doubled in size.
- 15. Wash the bell peppers.
- 16. Remove the stem and seeds from the bell pepper.
- 17. Cut the bell pepper into small cubes.
- 18. Drain the mozzarella.
- 19. Cut the mozzarella into small cubes as well.
- 20. Grate the parmesan finely.
- 21. Tear the ham into small pieces.
- 22. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 23. Divide the dough into 8 equal portions.
- 24. Sprinkle some flour on the work surface.
- 25. Shape the dough portions into balls.
- 26. Lightly flatten the dough balls.
- 27. Distribute the ham, bell pepper cubes, and cheese on the dough.
- 28. Pinch the dough together over the filling.
- 29. Shape the filled dough pieces back into balls using floured hands.
- 30. Place the rolls on a baking tray lined with parchment paper.
- 31. Cover the rolls.
- 32. Let the rolls rise for another 15 minutes.
- 33. Bake the rolls in the oven for about 25 minutes until they are golden brown.
- 34. Carefully remove the rolls from the oven.
- 35. Serve the rolls warm or cold.
