🍰 Mole Cake

Ingredients
- oil for greasing 1 tbsp
- butter 120 g
- sugar 120 g
- eggs 3 pcs
- milk 50 ml
- wheat flour, type 405 150 g
- cocoa powder 3 tsp
- baking powder 1 packet
- salt pinch
- bananas 4 pcs
- whipping cream 600 ml
- whipping aid 1 packet
- vanilla sugar 1 packet
- grated chocolate, dark 50 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Grease a springform pan with some oil.
- 3. Mix butter and sugar in a bowl with a hand mixer and whisk until the mixture is creamy.
- 4. Add the eggs and milk one by one to the butter-sugar mixture and continue mixing until creamy.
- 5. Add flour, cocoa powder, baking powder, and salt and mix everything into a smooth batter.
- 6. Fold the grated chocolate into the batter.
- 7. Pour the batter into the prepared springform pan.
- 8. Bake the base in the oven for about 30 minutes.
- 9. Let the cake base cool down completely.
- 10. Hollow out the center of the cooled cake base with a spoon, starting in the middle.
- 11. Make sure to leave a border of about 2 centimeters.
- 12. Hollow out the base about 1 centimeter deep.
- 13. Collect the removed dough pieces in a bowl.
- 14. Crumble the dough pieces into small crumbs using your hands.
- 15. Peel the bananas and halve them lengthwise.
- 16. Place the banana halves in the center of the hollowed-out cake base.
- 17. Whip the cream in a tall container.
- 18. Sprinkle Sahnesteif (whipping cream stabilizer) and vanilla sugar alternately into the whipped cream.
- 19. Fold the chocolate sprinkles into the cream mixture.
- 20. Spread the cream mixture over the mole cake base.
- 21. Shape a small mound of cream in the center.
- 22. Distribute the dough crumbs over the cream.
- 23. Press the crumbs down slightly.
- 24. Keep the cake cool until you serve it, or serve it immediately.
