🍽️ Crispy Maultaschen Salad with Mushrooms and Onions

Ingredients
- mushrooms, brown 400 g
- oil 8 tbsp
- salt pinch
- arugula 125 g
- parsley, fresh 20 g
- balsamic vinegar, light 2 tbsp
- mustard 1 tbsp
- honey 1 tbsp
- pepper, black ground pinch
- maultaschen, cut 600 g
- crispy onions 4 tbsp
Instructions
- 1. Clean the mushrooms if necessary using a kitchen towel.
- 2. Cut the mushrooms into quarters or sixth parts depending on their size.
- 3. Heat 2 tablespoons of oil in a frying pan over medium to high heat.
- 4. Fry the mushrooms with a pinch of salt, shaking the pan occasionally, for about 4 to 5 minutes until golden brown.
- 5. Remove the mushrooms from the pan and place them on a plate.
- 6. Clean the frying pan for the next step.
- 7. Wash the arugula thoroughly.
- 8. Spin the arugula dry.
- 9. Wash the parsley.
- 10. Remove the coarse stems from the parsley.
- 11. Finely chop the parsley.
- 12. Mix vinegar, mustard, and honey in a large bowl.
- 13. Stir 4 tablespoons of oil into the dressing mixture.
- 14. Season the dressing with salt and pepper.
- 15. Add a little water to loosen the dressing.
- 16. Heat another 2 tablespoons of oil in the frying pan over medium to high heat.
- 17. Fry the Maultaschen, shaking the pan occasionally, for about 3 to 5 minutes until golden brown.
- 18. Add the prepared mushrooms and the chopped parsley to the pan.
- 19. Toss everything well together.
- 20. Season the mixture in the pan with salt and pepper.
- 21. Add the Maultaschen, mushrooms, parsley, and arugula to the bowl with the dressing.
- 22. Mix everything well.
- 23. Taste the salad and adjust the seasoning if necessary.
- 24. Plate the Maultaschen salad.
- 25. Sprinkle the salad with fried onions.
- 26. Serve the salad and enjoy your meal!
