🍽️ Crispy Maultaschen with Beans, Pear, and Arugula

Ingredients
- Salt pinch
- Green beans 400 g
- Thyme, fresh 5 g
- Spring onions 0.5 bunch
- Pears 2 pcs.
- Arugula 100 g
- Vegetable Maultaschen 600 g
- Oil 2 tbsp
- Butter 3 tbsp
- Sugar 1 tsp
- Vinegar 2 tbsp
- Pepper, black ground pinch
Instructions
- 1. Bring about 2 liters of water to a boil in a pot and add salt.
- 2. Wash the beans thoroughly and trim the ends.
- 3. Cook the beans in the boiling salted water for 8 to 10 minutes.
- 4. Drain the beans in a colander and rinse them with cold water.
- 5. Let the beans drain completely in the colander.
- 6. Wash the thyme and shake it dry.
- 7. Strip the thyme leaves from the stems and chop them finely.
- 8. Wash the spring onions and trim off the root ends.
- 9. Cut the white and green parts of the spring onions into rings separately.
- 10. Wash the pear, quarter it, and remove the core.
- 11. Cut the pear pieces into wedges.
- 12. Wash the arugula and let it drain.
- 13. Cut the Maultaschen (German ravioli) into strips.
- 14. Heat oil in a pan over medium heat.
- 15. Fry the Maultaschen strips for about 7 minutes until golden brown.
- 16. Remove the Maultaschen from the pan and place them on a plate.
- 17. Clean the pan and melt 2 tablespoons of butter over medium heat.
- 18. Add the pear wedges to the pan and fry them all over for about 3 minutes until golden brown.
- 19. Sprinkle sugar over the pears.
- 20. Add the white spring onion rings and continue to fry for about 2 minutes.
- 21. Deglaze the pan with vinegar.
- 22. Stir the thyme and beans into the pears.
- 23. Fry the mixture for another 2 minutes.
- 24. Add 1 tablespoon of butter and the Maultaschen strips to the vegetables in the pan.
- 25. Heat everything briefly until the Maultaschen are warm.
- 26. Season the mixture with salt and pepper.
- 27. Fold in the green spring onion rings and the arugula.
- 28. Plate the Maultaschen with beans, pear, and arugula.
