  1. 1. Bring about 2 liters of water to a boil in a pot and add salt.
  2. 2. Wash the beans thoroughly and trim the ends.
  3. 3. Cook the beans in the boiling salted water for 8 to 10 minutes.
  4. 4. Drain the beans in a colander and rinse them with cold water.
  5. 5. Let the beans drain completely in the colander.
  6. 6. Wash the thyme and shake it dry.
  7. 7. Strip the thyme leaves from the stems and chop them finely.
  8. 8. Wash the spring onions and trim off the root ends.
  9. 9. Cut the white and green parts of the spring onions into rings separately.
  10. 10. Wash the pear, quarter it, and remove the core.
  11. 11. Cut the pear pieces into wedges.
  12. 12. Wash the arugula and let it drain.
  13. 13. Cut the Maultaschen (German ravioli) into strips.
  14. 14. Heat oil in a pan over medium heat.
  15. 15. Fry the Maultaschen strips for about 7 minutes until golden brown.
  16. 16. Remove the Maultaschen from the pan and place them on a plate.
  17. 17. Clean the pan and melt 2 tablespoons of butter over medium heat.
  18. 18. Add the pear wedges to the pan and fry them all over for about 3 minutes until golden brown.
  19. 19. Sprinkle sugar over the pears.
  20. 20. Add the white spring onion rings and continue to fry for about 2 minutes.
  21. 21. Deglaze the pan with vinegar.
  22. 22. Stir the thyme and beans into the pears.
  23. 23. Fry the mixture for another 2 minutes.
  24. 24. Add 1 tablespoon of butter and the Maultaschen strips to the vegetables in the pan.
  25. 25. Heat everything briefly until the Maultaschen are warm.
  26. 26. Season the mixture with salt and pepper.
  27. 27. Fold in the green spring onion rings and the arugula.
  28. 28. Plate the Maultaschen with beans, pear, and arugula.
