  3. 3. Roughly chop the walnuts.
  4. 4. Heat a frying pan over medium heat.
  5. 5. Toast the walnuts in the pan for about 2 to 3 minutes.
  6. 6. Wash the chives and shake them dry.
  7. 7. Finely chop the chives.
  8. 8. Add the vegan Maultaschen to the boiling vegetable broth.
  9. 9. Let the Maultaschen steep on low heat for about 6 to 8 minutes.
  10. 10. Whisk chives, balsamic vinegar, olive oil, mustard, salt, pepper, and a pinch of sugar in a bowl to make a dressing.
  11. 11. Toss the salad in a separate bowl with the dressing.
  12. 12. Drain the Maultaschen in a colander.
  13. 13. Cut the Maultaschen into quarters.
  14. 14. Cut the smoked tofu into small cubes.
  15. 15. Peel the apples and remove the core.
  16. 16. Cut the apples into small, bite-sized cubes.
  17. 17. Halve the shallots and peel them.
  18. 18. Slice the shallots into thin strips.
  19. 19. Heat 2 tablespoons of oil in a frying pan over medium heat.
  20. 20. Fry the Maultaschen and smoked tofu for about 4 to 5 minutes until golden brown.
  21. 21. Add the apple pieces and shallots in the last 1 to 2 minutes and fry them along with the rest.
  22. 22. Divide the salad among plates.

  24. 24. Sprinkle the dish with the toasted walnuts.
