🍽️ Crispy Maultaschen with Crisp Apple Salad

Ingredients
- vegetable broth 1 L
- corn salad mix 250 g
- walnut kernels 3 tbsp
- chives, fresh 20 g
- vegan maultaschen 400 g
- balsamic vinegar, light 2 tbsp
- olive oil 6 tbsp
- mustard 1 tsp
- salt pinch
- pepper, black ground pinch
- sugar pinch
- smoked tofu 150 g
- apples, red 1 pcs
- shallots 3 pcs
- oil 2 tbsp
Instructions
- 1. Bring vegetable broth to a boil in a pot.
- 2. Wash the salad greens and spin them dry.
- 3. Roughly chop the walnuts.
- 4. Heat a frying pan over medium heat.
- 5. Toast the walnuts in the pan for about 2 to 3 minutes.
- 6. Wash the chives and shake them dry.
- 7. Finely chop the chives.
- 8. Add the vegan Maultaschen to the boiling vegetable broth.
- 9. Let the Maultaschen steep on low heat for about 6 to 8 minutes.
- 10. Whisk chives, balsamic vinegar, olive oil, mustard, salt, pepper, and a pinch of sugar in a bowl to make a dressing.
- 11. Toss the salad in a separate bowl with the dressing.
- 12. Drain the Maultaschen in a colander.
- 13. Cut the Maultaschen into quarters.
- 14. Cut the smoked tofu into small cubes.
- 15. Peel the apples and remove the core.
- 16. Cut the apples into small, bite-sized cubes.
- 17. Halve the shallots and peel them.
- 18. Slice the shallots into thin strips.
- 19. Heat 2 tablespoons of oil in a frying pan over medium heat.
- 20. Fry the Maultaschen and smoked tofu for about 4 to 5 minutes until golden brown.
- 21. Add the apple pieces and shallots in the last 1 to 2 minutes and fry them along with the rest.
- 22. Divide the salad among plates.
- 23. Place the Maultaschen mixture on top of the salad.
- 24. Sprinkle the dish with the toasted walnuts.
- 25. Serve the salad immediately.
