  2. 2. Gently pat the fillets dry with a kitchen towel.
  3. 3. Cut the matjes fillets into small pieces.
  4. 4. Peel the onions.
  5. 5. Slice the onions into thin rings.
  6. 6. Wash the apples thoroughly.
  7. 7. Quarter the apples.
  8. 8. Remove the core from the apples.
  9. 9. Slice the apples into thin slices.
  10. 10. Drain the gherkins.
  11. 11. Catch the gherkin liquid in a small container.
  12. 12. Dice the gherkins.
  13. 13. Chop the capers finely.
  14. 14. Wash the fresh dill.
  15. 15. Dry the dill with a kitchen towel.
  16. 16. Chop the dill finely.
  17. 17. Put the mayonnaise into a large bowl.
  18. 18. Add the sour cream to the mayonnaise.
  19. 19. Add one tablespoon of the collected gherkin liquid to the bowl.
  20. 20. Add the chopped capers to the bowl.
  21. 21. Add the chopped dill to the bowl.
  22. 22. Optionally add a little sugar.
  23. 23. Mix the sauce ingredients well together.
  24. 24. Season the sauce with pepper.
  25. 25. Stir the prepared matjes pieces, onions, apples, and gherkins into the sauce.
