  1. 1. Wash the cucumber thoroughly under running water. Cut off the ends. Slice the cucumber into thin slices. Cut the slices into sticks about 4 centimeters long.
  2. 2. Wash the radishes thoroughly. Cut off the ends. Cut the radishes into sticks.
  3. 3. Put the cucumber and radish sticks into a bowl. Season them with honey, salt, and pepper. Mix everything well.
  4. 4. Wash the dill. Dry it well with a kitchen towel. Chop the dill finely.
  5. 5. Rinse the matjes fillets with cold water. Dry them with a kitchen towel.
  6. 6. Place 1 teaspoon of the cucumber and radish sticks on the bottom end of a matjes slice.
  7. 7. Roll up the matjes slice. Secure the roll with a toothpick.
  8. 8. Decorate the matjes rolls with the chopped dill.
  9. 9. Mix the remoulade and crème fraîche well together in a bowl.
  10. 10. Plate the matjes rolls. Serve them together with the remoulade.
