  1. 1. Wash the spring onions thoroughly and dry them.
  2. 2. Trim the roots of the spring onions and slice them into thin rings.
  3. 3. Wash the fennel thoroughly.
  4. 4. Set aside the green fennel fronds for garnishing.
  5. 5. Remove the hard core at the base of the fennel.
  6. 6. Halve the fennel and slice it thinly.
  7. 7. Wash the apples.
  8. 8. Quarter the apples and remove the core.
  9. 9. Slice the apple pieces thinly.
  10. 10. Wash the chives and dry them.
  11. 11. Chop the chives together with the reserved fennel greens.
  12. 12. Rinse the matjes fillets briefly to reduce the saltiness.
  13. 13. Drain the matjes fillets well.
  14. 14. Cut the matjes fillets into bite-sized pieces.
  15. 15. Mix cream cheese, yogurt, milk, and horseradish in a bowl.
  16. 16. Season the cream with salt, pepper, and sugar to taste.
  17. 17. Combine the matjes fillets, spring onions, fennel, and apples with the cream cheese mixture.
  18. 18. Let the salad marinate for about 1 hour before serving.
  19. 19. Garnish the finished salad with the chopped fennel greens and chives.
