🍽️ Matjes-Herring Salad with Apples and Horseradish Dressing

Ingredients
- spring onions 1 bunch
- fennel 200 g
- apples, green 2 pcs.
- chives, fresh 1 bunch
- matjes fillets 300 g
- cream cheese, plain 100 g
- yogurt, plain 100 g
- milk 2 tbsp
- horseradish cream 2 tsp
- salt pinch
- pepper, black ground pinch
- sugar pinch
Instructions
- 1. Wash the spring onions thoroughly and dry them.
- 2. Trim the roots of the spring onions and slice them into thin rings.
- 3. Wash the fennel thoroughly.
- 4. Set aside the green fennel fronds for garnishing.
- 5. Remove the hard core at the base of the fennel.
- 6. Halve the fennel and slice it thinly.
- 7. Wash the apples.
- 8. Quarter the apples and remove the core.
- 9. Slice the apple pieces thinly.
- 10. Wash the chives and dry them.
- 11. Chop the chives together with the reserved fennel greens.
- 12. Rinse the matjes fillets briefly to reduce the saltiness.
- 13. Drain the matjes fillets well.
- 14. Cut the matjes fillets into bite-sized pieces.
- 15. Mix cream cheese, yogurt, milk, and horseradish in a bowl.
- 16. Season the cream with salt, pepper, and sugar to taste.
- 17. Combine the matjes fillets, spring onions, fennel, and apples with the cream cheese mixture.
- 18. Let the salad marinate for about 1 hour before serving.
- 19. Garnish the finished salad with the chopped fennel greens and chives.
