🍰 Marzipan Stollen with Raisins

Ingredients
- Milk 250 ml
- Yeast, fresh 0.5 pcs
- Sugar 100 g
- Eggs 1 pcs
- butter 250 g
- Salt Pinch
- Wheat flour, Type 405 500 g
- Almonds, ground 125 g
- Raisins 100 g
- Marzipan base 200 g
- Chocolate, milk chocolate 125 g
- Powdered sugar 4 tbsp
Instructions
- 1. Warm 250 milliliters of milk in a pot for about one minute until it is lukewarm.
- 2. Crumble the yeast into the warm milk and dissolve it together with one tablespoon of sugar.
- 3. Let the yeast mixture rest covered for about ten minutes.
- 4. Separate the egg and use the egg white for another purpose.
- 5. Knead the yeast milk with the remaining sugar, butter, salt, egg yolk, flour, almonds, and raisins into a smooth dough in a bowl.
- 6. Let the dough rise again for about one hour.
- 7. Crumble the marzipan and chop the chocolate.
- 8. Knead both together in a bowl with two tablespoons of powdered sugar.
- 9. Shape the mixture into an elongated roll.
- 10. Roll the dough on a floured surface into a rectangle.
- 11. Place the marzipan roll on the dough and fold the dough over it from both sides.
- 12. Press the stollen well.
- 13. Place the stollen on a baking sheet lined with baking paper.
- 14. Let the stollen rise covered for about thirty minutes.
- 15. Preheat the oven to 180 degrees Celsius (convection).
- 16. Bake the marzipan stollen with raisins for about 45 minutes.
- 17. Let the stollen cool down afterwards.
- 18. Dust the cooled stollen with powdered sugar.
