🍰 Marzipan Panna Cotta with Cherries

Ingredients
- leaf gelatin 4 pcs
- marzipan paste 100 g
- whipping cream 400 g
- sugar 60 g
- cherries, fresh 300 g
- cornstarch 1 tsp
Instructions
- 1. Place the gelatin leaves in a bowl of cold water for a few minutes.
- 2. Crumble the marzipan base and add it to a pot with the cream.
- 3. Puree the mixture in the pot until it is fine and homogeneous.
- 4. Warm the marzipan-cream mixture over very low heat.
- 5. Add 40 grams of sugar and let the mixture steep for about 10 minutes.
- 6. Remove the soaked gelatin from the water and squeeze it lightly.
- 7. Stir the gelatin into the warm marzipan-cream until it has completely dissolved.
- 8. Distribute the panna cotta mixture evenly among four glasses.
- 9. Place the glasses in the refrigerator for about 3 hours to let the panna cotta set.
- 10. Place the cherries in a sieve and catch the draining juice in a container.
- 11. Place the cherries in a pot along with 100 milliliters of the collected juice and 20 grams of sugar.
- 12. Bring the mixture to a boil in a pot and then continue to heat it over medium heat.
- 13. Mix the starch in a small bowl with 3 tablespoons of cherry juice.
- 14. Stir the starch mixture into the pot with the cherries.
- 15. Let the cherry filling simmer for about 2 minutes.
- 16. Carefully turn out the set marzipan panna cotta from the glasses.
- 17. Plate the panna cotta and serve it together with the lukewarm cherries.
