  1. 1. Place the gelatin leaves in a bowl of cold water for a few minutes.
  2. 2. Crumble the marzipan base and add it to a pot with the cream.
  3. 3. Puree the mixture in the pot until it is fine and homogeneous.
  4. 4. Warm the marzipan-cream mixture over very low heat.
  5. 5. Add 40 grams of sugar and let the mixture steep for about 10 minutes.
  6. 6. Remove the soaked gelatin from the water and squeeze it lightly.
  7. 7. Stir the gelatin into the warm marzipan-cream until it has completely dissolved.
  8. 8. Distribute the panna cotta mixture evenly among four glasses.
  9. 9. Place the glasses in the refrigerator for about 3 hours to let the panna cotta set.
  10. 10. Place the cherries in a sieve and catch the draining juice in a container.
  11. 11. Place the cherries in a pot along with 100 milliliters of the collected juice and 20 grams of sugar.
  12. 12. Bring the mixture to a boil in a pot and then continue to heat it over medium heat.
  13. 13. Mix the starch in a small bowl with 3 tablespoons of cherry juice.
  14. 14. Stir the starch mixture into the pot with the cherries.
  15. 15. Let the cherry filling simmer for about 2 minutes.
  16. 16. Carefully turn out the set marzipan panna cotta from the glasses.
  17. 17. Plate the panna cotta and serve it together with the lukewarm cherries.
