  1. 1. Place the olives in a colander and let them drain.
  2. 2. Wash the parsley thoroughly and pat it dry.
  3. 3. Pick the parsley leaves off the stems and chop them finely.
  4. 4. Rinse the lemon under hot water.
  5. 5. Grate about half a teaspoon of lemon zest finely.
  6. 6. Cut the Manchego cheese into coarse cubes.
  7. 7. Put the olive oil, lemon zest, cayenne pepper, chopped parsley, olives, and almonds into a bowl.
  8. 8. Mix the ingredients in the bowl well together.
  9. 9. Add the Manchego cubes to the marinade.
  10. 10. Let the cheese marinate for at least 4 hours before serving.
