🍽️ Mango Chutney with Marinated Beef Steaks

Ingredients
- coriander, fresh 20 g
- garlic cloves 1 pc
- ginger, fresh 20 g
- oil 6 tbsp
- beef rump steaks 600 g
- salt pinch
- shallots 1 pc
- mango 2 pc
- brown sugar 1 tsp
- balsamic vinegar, light 2 tbsp
- chili, ground pinch
Instructions
- 1. Wash the coriander leaves thoroughly and let them drain well.
- 2. Finely chop the coriander leaves.
- 3. Peel the garlic cloves and the ginger.
- 4. Cut the garlic and ginger into small pieces.
- 5. Put 4 tablespoons of oil into a bowl.
- 6. Mix the oil with the chopped coriander, garlic, and ginger.
- 7. Pat the steaks dry with a kitchen towel.
- 8. Lightly salt the steaks.
- 9. Turn the steaks in the marinade until they are well coated.
- 10. Halve the shallot.
- 11. Peel the shallot.
- 12. Cut the shallot into small cubes.
- 13. Peel the mango.
- 14. Separate the mango flesh from the pit.
- 15. Cut the mango flesh into cubes.
- 16. Put 1 tablespoon of oil into a pot.
- 17. Heat the oil on high heat.
- 18. Fry the shallot cubes for about 1 minute.
- 19. Add the mango cubes to the pot.
- 20. Sprinkle the mango with sugar.
- 21. Caramelize the mango for approx. 3 minutes.
- 22. Deglaze the mixture with vinegar.
- 23. Bring the mixture to a boil.
- 24. Simmer the chutney on low heat for approx. 15 minutes.
- 25. Season the chutney with chili and salt.
- 26. Put 1 tablespoon of oil into a frying pan.
- 27. Heat the oil in the frying pan strongly.
- 28. Take the steaks out of the marinade.
- 29. Fry the steaks in the hot oil on both sides for about 2 to 3 minutes.
- 30. Pour the remaining marinade over the meat.
- 31. Take the frying pan off the stove.
- 32. Let the meat rest covered for about 5 minutes.
- 33. Plate the steaks.
- 34. Serve the steaks together with the mango chutney.
