  1. 1. Mix brown sugar, paprika powder, and ground black pepper in a small bowl.
  2. 2. Wash the rumpsteaks and pat them completely dry with kitchen paper.
  3. 3. Score the fat edges on the sides of the steaks several times.
  4. 4. Rub two-thirds of the spice mixture all over the steaks.
  5. 5. Let the steaks marinate for about 10 minutes.
  6. 6. Wash the fresh herbs and shake them dry.
  7. 7. Pluck the parsley leaves and dill sprigs from the stems.
  8. 8. Finely chop the parsley and dill.
  9. 9. Cut the chives into fine rings.
  10. 10. Mix the butter with the chopped herbs.
  11. 11. Season the herb butter with sea salt and lemon juice.
  12. 12. Shape the herb butter into a roll using cling film.
  13. 13. Place the herb butter roll in the fridge to chill.
  14. 14. Place the marinated steaks in the basket of the air fryer.
  15. 15. Preheat the air fryer to 200 degrees and cook the steaks for 6 minutes.
  16. 16. Turn the steaks over after 6 minutes.
  17. 17. Cook the steaks at 200 degrees for another 6 minutes.
  18. 18. Wrap the cooked steaks in aluminum foil.
  19. 19. Let the steaks rest in the foil for about 8 minutes.
  20. 20. Clean the mushrooms with kitchen paper if necessary.
  21. 21. Slice the mushrooms.
  22. 22. Wash the salad and spin it dry.
  23. 23. Gently mix the salad and mushrooms with olive oil.
  24. 24. Season the salad vegetables with salt and pepper.
  25. 25. Cut the cold herb butter into thick slices.
  26. 26. Slice the rested steaks.
  27. 27. Plate the steak slices with the salad and herb butter.
  28. 28. Drizzle the dish with the collected meat juices.
  29. 29. Sprinkle the remaining spice mix and some sea salt over the meat.
