🥗 Marinated Salmon Skewers on Fresh Salad

Ingredients
- salmon fillet, frozen 600 g
- garlic cloves 1 pc.
- ginger, fresh 10 g
- lemons 1 pc.
- sunflower oil 2 tbsp
- soy sauce 1 tbsp
- salt pinch
- pepper, black ground pinch
- mini romaine 2 pc.
- carrots 2 pc.
- salad cucumbers 1 pc.
- spring onions 2 pc.
- baguette 1 pc.
Instructions
- 1. Thaw the salmon overnight in the refrigerator.
- 2. Place the wooden skewers in a container of cold water.
- 3. Preheat the oven to 230 degrees Celsius with fan.
- 4. Peel the garlic and the ginger.
- 5. Finely chop the garlic and ginger.
- 6. Cut the lemon in half.
- 7. Squeeze the juice from the lemon.
- 8. Put the chopped garlic and ginger into a bowl.
- 9. Add the lemon juice to the bowl.
- 10. Add the oil to the bowl.
- 11. Add the soy sauce to the bowl.
- 12. Season the mixture with salt and pepper.
- 13. Stir all ingredients for the marinade well.
- 14. Rinse the salmon under cold water.
- 15. Pat the salmon dry with a kitchen towel.
- 16. Cut the salmon into coarse cubes.
- 17. Thread the salmon cubes onto the soaked skewers.
- 18. Drizzle the skewers with four tablespoons of the marinade.
- 19. Let the skewers marinate covered for about 15 minutes.
- 20. Set aside the remaining marinade.
- 21. Separate the lettuce leaves from the stem.
- 22. Tear the lettuce leaves into bite-sized pieces.
- 23. Wash the lettuce leaves thoroughly.
- 24. Rinse the carrots.
- 25. Peel the carrots.
- 26. Wash the cucumber as well.
- 27. Grate the cucumber coarsely.
- 28. Grate the carrots coarsely as well.
- 29. Wash the spring onions.
- 30. Dry the spring onions.
- 31. Remove the roots from the spring onions.
- 32. Slice the spring onions into thin rings.
- 33. Place the salmon skewers in a baking dish.
- 34. Place the baking dish on the top rack in the oven.
- 35. Cook the skewers in the oven for about 10 minutes.
- 36. Turn the skewers once during cooking.
- 37. Mix the washed salad with the set-aside marinade.
- 38. Plate the salad on dishes.
- 39. Place the baked salmon skewers on the salad.
- 40. Serve the dish with baguette.
