  1. 1. Clean the mushrooms with a kitchen towel if necessary.
  2. 2. Cut large mushrooms in half or quarters.
  3. 3. Halve the onions, peel them, and slice them into thin strips.
  4. 4. Peel the garlic and slice it thinly.
  5. 5. Heat 6 tablespoons of oil in a pan over medium heat.
  6. 6. Fry the garlic in the hot oil for 2 to 3 minutes.
  7. 7. Remove the garlic from the pan and set it aside.
  8. 8. Fry the mushrooms in the remaining garlic oil for about 15 minutes, turning them around.
  9. 9. Season the mushrooms with salt and pepper while frying.
  10. 10. Add the onion strips to the pan for the last 3 to 5 minutes of frying.
  11. 11. Deglaze the pan with port wine and vinegar.
  12. 12. Adjust the seasoning to taste with salt and pepper.
  13. 13. Transfer the mushrooms and onions into a bowl.
  14. 14. Stir in the reserved garlic and the remaining oil.
  15. 15. Let the mixture cool down.
  16. 16. Cover the bowl and let the mushrooms marinate for 1 to 2 hours.
  17. 17. Adjust the taste of the marinated mushrooms with extra port wine and vinegar if desired.
  18. 18. Serve the mushrooms topped with shredded ham.
