🍽️ Marinated Chicken Skewers with Apricots and Bacon

Ingredients
- yellow onions 2 pcs
- garlic cloves 2 pcs
- oil 6 tbsp
- curry powder pinch
- salt pinch
- pepper, black ground pinch
- chili, ground pinch
- white wine, dry 4 tbsp
- vegetable broth 180 ml
- apricot jam 6 tbsp
- chicken breast fillets 600 g
- apricots, fresh 300 g
- bacon 100 g
- yogurt, plain 150 g
Instructions
- 1. Halve the onions and peel them. Dice the onions into small pieces. Peel the garlic and chop it finely. Heat two tablespoons of oil in a pan over medium heat. Sauté the onions and garlic for about two minutes. Season the mixture with curry, salt, pepper, and chili. Stir everything well. Deglaze the pan with white wine and broth. Stir in the jam. Let the sauce simmer for about three minutes. Remove the pan from the heat and let the marinade cool down completely.
- 2. Rinse the chicken thoroughly. Pat it dry with a kitchen towel. Cut the meat into uniform cubes. Place the meat in a bowl. Take half of the cooled marinade and mix it with the meat. Set the bowl aside. Wash the apricots. Cut them into quarters. Remove the pits from the apricot quarters.
- 3. Place the wooden skewers in a container of water and let them soak. Thread chicken pieces, apricot quarters, and bacon strips onto the skewers in an alternating pattern. Lightly brush the skewers with oil. Preheat the grill. Grill the skewers over hot flames for about twelve minutes. Turn the skewers once halfway through the cooking time. Alternatively: Heat a pan over medium to high heat. Pan-fry the skewers for about four minutes on each side.
- 4. Take the remaining marinade. Whisk it in a small bowl with the yogurt. Taste the dip and adjust if necessary. Plate the finished skewers. Serve the skewers with the yogurt dip. Enjoy your meal!
