  1. 1. Cut the onion in half and peel off the outer skin. Dice the onion into very small cubes.
  2. 2. Peel the garlic cloves. Dice the garlic finely as well.
  3. 3. Pour olive oil into a pot and heat it over medium heat.
  4. 4. Add the diced onions and garlic to the hot oil. Sauté the vegetables for about 2 minutes until they become soft and translucent.
  5. 5. Stir in the tomato paste and let it roast in the pot for about 3 minutes.
  6. 6. Add the chopped tomatoes and oregano to the pot.
  7. 7. Let the sauce simmer for about 20 minutes over medium heat. Stir constantly while doing so.
  8. 8. Season the finished sauce with salt and pepper to taste.
  9. 9. Serve the sauce warm with pasta or pizza. Alternatively, you can fill the hot sauce into a clean jar and seal it airtight.
