🍰 Mango-Chocolate Cake

Ingredients
- butter cookies 200 g
- butter 150 g
- gelatin sheets 6 pcs
- organic limes 1 pc
- chocolate, white 100 g
- mango 1 pc
- cream cheese, plain 400 g
- sour cream 200 g
- brown sugar 100 g
- whipping cream 400 g
Instructions
- 1. Put the butter cookies in a freezer bag and crush them thoroughly. Then melt the butter in a pot and mix it with the cookie crumbs. Fill the mixture into a springform pan lined with baking paper and press it down firmly.
- 2. Soak the gelatin in a bowl in cold water. Wash the lime hot, grate about 1 tsp of the zest finely, halve it and squeeze out the juice. Chop the chocolate into small pieces. Peel the mango, cut the flesh off the pit and cut it into small cubes.
- 3. In a separate bowl, mix the cream cheese, sour cream, sugar, lime juice and zest well.
- 4. Squeeze the gelatin well and melt it in a small pot over low heat. Stir about 1 tbsp of the cream cheese mixture with the melted gelatin and then combine everything and mix well.
- 5. In another bowl, beat the cream stiff with a hand mixer and whisk and gently fold it into the cream cheese mixture. Fold in the chopped chocolate and the mango cubes.
- 6. Distribute the mango chocolate cream evenly in the springform pan and let it set in the refrigerator for at least 3 hours. Remove the mango chocolate cake from the pan and serve. Enjoy your meal!
