🍽️ Crispy Curry Sausage with Mango Dip, Oven Potatoes, and Cabbage Salad

Ingredients
- potatoes, mainly waxy 1 kg
- oil 6 tbsp
- mango 1 pc
- spring onions 1 bunch
- sugar 1 tbsp
- curry powder 1 tsp
- tomato paste 4 tbsp
- ketchup 100 ml
- salt pinch
- pepper, black ground pinch
- grilled sausages 4 pc
- sauerkraut 720 g
- sour cream 100 g
- honey 1 tbsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan setting.
- 2. Wash the potatoes thoroughly.
- 3. Cut the potatoes into wedges.
- 4. Line a baking tray with baking paper.
- 5. Place the potato wedges on the tray.
- 6. Add two tablespoons of oil.
- 7. Mix the potatoes well with the oil.
- 8. Bake the potatoes for about 30 minutes.
- 9. Remove the potatoes when they are golden brown.
- 10. Peel the mango.
- 11. Carefully cut the flesh away from the pit.
- 12. Dice the mango flesh finely.
- 13. Wash the spring onions.
- 14. Dry the spring onions.
- 15. Cut off the roots of the spring onions.
- 16. Separate the white and green parts of the spring onions.
- 17. Slice the spring onions into rings.
- 18. Heat two tablespoons of oil in a pot.
- 19. Set the heat to medium.
- 20. Add the white parts of the spring onions to the pot.
- 21. Add sugar and curry powder.
- 22. Caramelize the onions for about two minutes.
- 23. Wait until the onions are translucent.
- 24. Add tomato paste to the pot.
- 25. Add ketchup.
- 26. Fry the mixture for about one minute.
- 27. Add the diced mango to the pot.
- 28. Add 250 milliliters of water.
- 29. Stir the sauce until smooth.
- 30. Let the sauce simmer on low to medium heat.
- 31. Simmer the sauce for about 10 minutes.
- 32. Season the sauce with salt and pepper.
- 33. Cut the sausages diagonally into pieces.
- 34. The pieces should be about two centimeters wide.
- 35. Heat two tablespoons of oil in a frying pan.
- 36. Set the heat to medium-high.
- 37. Place the sausage slices in the pan.
- 38. Fry the sausage until crispy and brown on all sides.
- 39. This takes about eight minutes.
- 40. Turn the sausage slices several times.
- 41. Let the sauerkraut drain in a colander.
- 42. Squeeze the sauerkraut well.
- 43. Take a bowl.
- 44. Mix the sauerkraut with sour cream.
- 45. Add honey.
- 46. Mix the green parts of the spring onions into the sauerkraut.
- 47. Season the cabbage salad with salt and pepper.
- 48. Take the potato wedges out of the oven.
- 49. Sprinkle the potatoes with salt.
- 50. Arrange the potatoes on plates.
- 51. Place the sausage next to them.
- 52. Add the mango curry sauce.
- 53. Sprinkle the sausage with curry if desired.
- 54. Serve the mango curry sausage with the cabbage salad.
