  1. 1. Peel the mangoes and cut the flesh into small cubes.
  2. 2. Peel the ginger and dice it finely as well.
  3. 3. Place the vinegar, mango cubes, and ginger into a pot.
  4. 4. Heat the mixture over medium temperature until it boils.
  5. 5. Let the chutney simmer for about 10 minutes.
  6. 6. Wash the coriander and shake it dry.
  7. 7. Chop the coriander into small pieces.
  8. 8. Remove the physalis from their husks and wash them.
  9. 9. Halve the washed physalis.
  10. 10. Add the coriander, physalis, sugar, 2 teaspoons of salt, and the remaining spices to the pot.
  11. 11. Let everything simmer over low heat for about 30 minutes.
  12. 12. Stir occasionally until the chutney becomes thicker.
  13. 13. Fill the hot chutney to the brim into clean preserving jars (250 ml).
  14. 14. Seal the jars tightly.
  15. 15. Let the jars cool down.
