  1. 1. Soak the gelatin leaves in a bowl of cold water.
  2. 2. Wash the lime thoroughly.
  3. 3. Grate about one teaspoon of lime zest.
  4. 4. Cut the lime in half and squeeze out the juice.
  5. 5. Peel the mango and cut the flesh away from the pit.
  6. 6. Cut the mango flesh into coarse cubes.
  7. 7. Cut the avocados in half and remove the pits.
  8. 8. Scoop the avocado flesh out of the skin with a spoon.
  9. 9. Place the mango and avocados into a tall container.
  10. 10. Add one tablespoon of lime juice and the grated zest.
  11. 11. Puree the mixture until smooth.
  12. 12. Place the cream into a separate bowl.
  13. 13. Whip the cream stiffly using a hand mixer.
  14. 14. Squeeze the soaked gelatin lightly.
  15. 15. Warm two tablespoons of the mango cream in a pot over low heat.
  16. 16. Dissolve the gelatin in the warm cream.
  17. 17. Fold the gelatin mixture into the remaining mango cream.
  18. 18. Gently fold in the whipped cream.
  19. 19. Place the mixture in the refrigerator for about two hours until set.
  20. 20. Wash the mint and shake it dry.
  21. 21. Separate the mint leaves from the stems.
  22. 22. Take the mousse out of the refrigerator.
  23. 23. Shape the mousse with a spoon.
  24. 24. Decorate the mousse with the mint leaves.
  25. 25. Serve the dish.
