🍰 Fresh Mango-Avocado Mousse

Ingredients
- leaf gelatin 2 pcs
- organic limes 1 pc
- mango 1 pc
- avocado 2 pcs
- whipping cream 200 g
- mint, fresh 5 g
Instructions
- 1. Soak the gelatin leaves in a bowl of cold water.
- 2. Wash the lime thoroughly.
- 3. Grate about one teaspoon of lime zest.
- 4. Cut the lime in half and squeeze out the juice.
- 5. Peel the mango and cut the flesh away from the pit.
- 6. Cut the mango flesh into coarse cubes.
- 7. Cut the avocados in half and remove the pits.
- 8. Scoop the avocado flesh out of the skin with a spoon.
- 9. Place the mango and avocados into a tall container.
- 10. Add one tablespoon of lime juice and the grated zest.
- 11. Puree the mixture until smooth.
- 12. Place the cream into a separate bowl.
- 13. Whip the cream stiffly using a hand mixer.
- 14. Squeeze the soaked gelatin lightly.
- 15. Warm two tablespoons of the mango cream in a pot over low heat.
- 16. Dissolve the gelatin in the warm cream.
- 17. Fold the gelatin mixture into the remaining mango cream.
- 18. Gently fold in the whipped cream.
- 19. Place the mixture in the refrigerator for about two hours until set.
- 20. Wash the mint and shake it dry.
- 21. Separate the mint leaves from the stems.
- 22. Take the mousse out of the refrigerator.
- 23. Shape the mousse with a spoon.
- 24. Decorate the mousse with the mint leaves.
- 25. Serve the dish.
