Ingredients
- Eggs 2 pcs.
- Almonds, ground 200 g
- Icing sugar 200 g
Instructions
- 1. Separate the eggs and use the egg yolks for another purpose. Attach the whisk to the mixing bowl and beat the egg whites in the mixing pot for 3 minutes at speed 4 until stiff.
- 2. Add the almonds and icing sugar and gently fold them in for 5 minutes at speed 2. Using two teaspoons, place 24 portions of the dough with some space between them on two baking sheets lined with baking paper and let them rest at room temperature for about 4 hours.
- 3. Preheat the oven to 150 °C (fan). Carefully shape the slightly dried almond cookies into rounds with your fingers and bake the sheets one after the other for about 15 minutes until they are lightly colored and still soft inside.
- 4. Let the soft almond cookies cool down and store them wrapped in baking paper. Enjoy!
