  1. 1. Roughly chop the almonds.
  2. 2. Heat a pan without fat over medium heat.
  3. 3. Toast the almonds in the pan for about 2 minutes.
  4. 4. Sprinkle sugar over the almonds.
  5. 5. Caramelize the almonds for about 2 minutes until they are light brown.
  6. 6. Place the almonds on parchment paper.
  7. 7. Let the almonds cool.
  8. 8. Put cream and milk in a pot.
  9. 9. Bring the cream and milk mixture to a boil.
  10. 10. Heat about 500 ml of water in a second pot.
  11. 11. Separate the eggs.
  12. 12. Use the egg whites for something else.
  13. 13. Whisk the egg yolks with honey in a bowl until frothy.
  14. 14. Pour the hot cream and milk mixture into the egg yolks while stirring constantly.
  15. 15. Place the bowl over the pot with hot water (water bath).
  16. 16. Heat the mixture while stirring constantly for about 10 minutes.
  17. 17. Remove the mixture from the water bath when it thickens slightly.
  18. 18. Let the mixture cool.
  19. 19. Chop the cooled almonds.
  20. 20. Fold the chopped almonds into the cooled mixture.
  21. 21. Line a loaf pan with plastic wrap.
  22. 22. Pour the almond mixture into the pan.
  23. 23. Place the pan in the freezer.
  24. 24. Stir the mixture when it starts to freeze.
  25. 25. Distribute the almond pieces evenly.
  26. 26. Freeze the parfait completely for at least 4 hours or overnight.
  27. 27. Remove the parfait from the pan.
  28. 28. Remove the plastic wrap.
  29. 29. Slice the parfait.
  30. 30. Serve the parfait.
