🍰 Crunchy Almond-Honey Ice Cream

Ingredients
- almonds, whole 50 g
- sugar 50 g
- whipping cream 250 g
- milk 150 ml
- eggs 4 pcs
- honey 60 g
Instructions
- 1. Roughly chop the almonds.
- 2. Heat a pan without fat over medium heat.
- 3. Toast the almonds in the pan for about 2 minutes.
- 4. Sprinkle sugar over the almonds.
- 5. Caramelize the almonds for about 2 minutes until they are light brown.
- 6. Place the almonds on parchment paper.
- 7. Let the almonds cool.
- 8. Put cream and milk in a pot.
- 9. Bring the cream and milk mixture to a boil.
- 10. Heat about 500 ml of water in a second pot.
- 11. Separate the eggs.
- 12. Use the egg whites for something else.
- 13. Whisk the egg yolks with honey in a bowl until frothy.
- 14. Pour the hot cream and milk mixture into the egg yolks while stirring constantly.
- 15. Place the bowl over the pot with hot water (water bath).
- 16. Heat the mixture while stirring constantly for about 10 minutes.
- 17. Remove the mixture from the water bath when it thickens slightly.
- 18. Let the mixture cool.
- 19. Chop the cooled almonds.
- 20. Fold the chopped almonds into the cooled mixture.
- 21. Line a loaf pan with plastic wrap.
- 22. Pour the almond mixture into the pan.
- 23. Place the pan in the freezer.
- 24. Stir the mixture when it starts to freeze.
- 25. Distribute the almond pieces evenly.
- 26. Freeze the parfait completely for at least 4 hours or overnight.
- 27. Remove the parfait from the pan.
- 28. Remove the plastic wrap.
- 29. Slice the parfait.
- 30. Serve the parfait.
