🍰 Clementine Sorbet with Sparkling Wine

Ingredients
- water 500 ml
- sugar 300 g
- clementine 2 kg
- lemon 2 pc.
- pomegranate 1 pc.
- sparkling wine, dry 1 L
Instructions
- 1. Put sugar and hot water into the mixing container.
- 2. Insert the measuring cup.
- 3. Heat the mixture for 5 minutes on level 2 at 100 degrees Celsius.
- 4. Cut the clementines and lemons.
- 5. Squeeze the juice from the fruits.
- 6. Pour 700 milliliters of the fresh juice into the mixing container.
- 7. Puree the liquid for 10 seconds on level 4.
- 8. Pour the mixture into a shallow dish.
- 9. Line the dish with cling film.
- 10. Let the mixture cool down for about 30 minutes.
- 11. Place the dish in the freezer for at least 12 hours.
- 12. Halve the pomegranate.
- 13. Release the seeds by tapping the skin with a spoon.
- 14. Turn the frozen mixture out of the dish.
- 15. Cut the frozen mass into coarse pieces.
- 16. Put the pieces into the mixing container.
- 17. Remove the measuring cup.
- 18. Crush the mass for 10 seconds on level 8.
- 19. Stir through the opening in the lid with a spatula while doing so.
- 20. Push the contents down.
- 21. Repeat the crushing process.
- 22. Place a ball of clementine sorbet into each sparkling wine glass.
- 23. Fill the glasses with well-chilled sparkling wine.
- 24. Garnish the drinks with pomegranate seeds.
