  1. 1. Preheat the oven to 170 degrees Celsius using the top and bottom heat setting.
  2. 2. Line the bottom of the springform pan with baking paper.
  3. 3. Lightly grease the sides of the pan with a little margarine.
  4. 4. Finely chop the whole almonds with a kitchen knife.
  5. 5. Place the chopped almonds, ground almonds, spelt flour, cane sugar, vanilla sugar, baking powder, cinnamon, and salt into a large bowl.
  6. 6. Mix all the dry ingredients together using a hand mixer until well combined.
  7. 7. Melt the margarine in a saucepan over low heat.
  8. 8. Wash the lemon thoroughly.
  9. 9. Grate four teaspoons of fine zest from the lemon.
  10. 10. Add the melted margarine, the lemon zest, and the almond drink to the dough mixture.
  11. 11. Stir everything with the hand mixer until a smooth dough forms.
  12. 12. Pour the cake batter into the prepared springform pan.
  13. 13. Bake the cake for about 40 to 45 minutes on the middle rack in the oven.
  14. 14. Remove the cake from the oven after the baking time.
  15. 15. Allow the cake to cool completely.
  16. 16. Carefully release the cake from the springform pan.
  17. 17. Dust the cooled cake with powdered sugar shortly before serving.
