🍰 Mallorcan Almond Cake

Ingredients
- vegan margarine 140 g
- whole almonds 100 g
- ground almonds 230 g
- spelt flour, type 630 200 g
- brown sugar 100 g
- vanilla sugar 1 tsp
- baking powder 2 tsp
- cinnamon 1 tsp
- salt pinch
- organic lemon 1 pc
- almond drink 400 ml
- powdered sugar 3 tbsp
Instructions
- 1. Preheat the oven to 170 degrees Celsius using the top and bottom heat setting.
- 2. Line the bottom of the springform pan with baking paper.
- 3. Lightly grease the sides of the pan with a little margarine.
- 4. Finely chop the whole almonds with a kitchen knife.
- 5. Place the chopped almonds, ground almonds, spelt flour, cane sugar, vanilla sugar, baking powder, cinnamon, and salt into a large bowl.
- 6. Mix all the dry ingredients together using a hand mixer until well combined.
- 7. Melt the margarine in a saucepan over low heat.
- 8. Wash the lemon thoroughly.
- 9. Grate four teaspoons of fine zest from the lemon.
- 10. Add the melted margarine, the lemon zest, and the almond drink to the dough mixture.
- 11. Stir everything with the hand mixer until a smooth dough forms.
- 12. Pour the cake batter into the prepared springform pan.
- 13. Bake the cake for about 40 to 45 minutes on the middle rack in the oven.
- 14. Remove the cake from the oven after the baking time.
- 15. Allow the cake to cool completely.
- 16. Carefully release the cake from the springform pan.
- 17. Dust the cooled cake with powdered sugar shortly before serving.
