  1. 1. Wash the spinach thoroughly and dry it in a salad spinner.
  2. 2. Halve, peel, and finely dice the onion.
  3. 3. Halve and peel the garlic.
  4. 4. Finely dice the garlic.
  5. 5. Melt 2 tablespoons of butter in a pot over medium heat.
  6. 6. Sauté the onion and garlic for about 2 minutes until translucent.
  7. 7. Add the spinach and stir for about 2 minutes until it wilts.
  8. 8. Season the mixture with salt and pepper.
  9. 9. Transfer the spinach mixture to a bowl and let it cool.
  10. 10. Grate the Parmesan finely.
  11. 11. Wash the lemon thoroughly.
  12. 12. Grate about 1/2 teaspoon of lemon zest.
  13. 13. Halve the lemon.
  14. 14. Squeeze the juice from the lemon.
  15. 15. Add cream cheese and half of the Parmesan to the cooled spinach mixture.
  16. 16. Mix the mixture with eggs and 180 grams of flour.
  17. 17. Season the dough with salt and pepper.
  18. 18. If the dough is too soft, add a little more flour.
  19. 19. Place the dough in the refrigerator for about 30 minutes.
  20. 20. Bring about 3 liters of salted water to a boil in a large pot.
  21. 21. Cover the pot.
  22. 22. Moisten your hands.
  23. 23. Form small dumplings from the spinach mixture (2–3 cm in size).
  24. 24. Add the dumplings in batches to the boiling salted water.
  25. 25. Cook the dumplings for about 5 minutes.
  26. 26. Keep the water warm, but not boiling vigorously.
  27. 27. Remove the malfatti as soon as they float to the surface.
  28. 28. Remove the cooked malfatti with a sieve.
  29. 29. Let the dumplings drain briefly.
  30. 30. Heat the remaining butter in a pan over medium to high heat.
  31. 31. Fry the malfatti for about 3–4 minutes until golden brown, turning occasionally.
  32. 32. Season the dumplings with salt and pepper.
  33. 33. Add a little lemon juice if desired.
  34. 34. Plate the malfatti.
  35. 35. Sprinkle them with the remaining Parmesan.
  36. 36. Drizzle them with the butter.
