🍽️ Homemade Spinach Dumplings

Ingredients
- spinach 200 g
- onions, yellow 1 pc.
- garlic cloves 2 pc.
- butter 5 tbsp
- salt pinch
- pepper, black ground pinch
- parmesan 150 g
- organic lemons 1 pc.
- cream cheese, plain 250 g
- eggs 2 pc.
- wheat flour, Type 405 200 g
Instructions
- 1. Wash the spinach thoroughly and dry it in a salad spinner.
- 2. Halve, peel, and finely dice the onion.
- 3. Halve and peel the garlic.
- 4. Finely dice the garlic.
- 5. Melt 2 tablespoons of butter in a pot over medium heat.
- 6. Sauté the onion and garlic for about 2 minutes until translucent.
- 7. Add the spinach and stir for about 2 minutes until it wilts.
- 8. Season the mixture with salt and pepper.
- 9. Transfer the spinach mixture to a bowl and let it cool.
- 10. Grate the Parmesan finely.
- 11. Wash the lemon thoroughly.
- 12. Grate about 1/2 teaspoon of lemon zest.
- 13. Halve the lemon.
- 14. Squeeze the juice from the lemon.
- 15. Add cream cheese and half of the Parmesan to the cooled spinach mixture.
- 16. Mix the mixture with eggs and 180 grams of flour.
- 17. Season the dough with salt and pepper.
- 18. If the dough is too soft, add a little more flour.
- 19. Place the dough in the refrigerator for about 30 minutes.
- 20. Bring about 3 liters of salted water to a boil in a large pot.
- 21. Cover the pot.
- 22. Moisten your hands.
- 23. Form small dumplings from the spinach mixture (2–3 cm in size).
- 24. Add the dumplings in batches to the boiling salted water.
- 25. Cook the dumplings for about 5 minutes.
- 26. Keep the water warm, but not boiling vigorously.
- 27. Remove the malfatti as soon as they float to the surface.
- 28. Remove the cooked malfatti with a sieve.
- 29. Let the dumplings drain briefly.
- 30. Heat the remaining butter in a pan over medium to high heat.
- 31. Fry the malfatti for about 3–4 minutes until golden brown, turning occasionally.
- 32. Season the dumplings with salt and pepper.
- 33. Add a little lemon juice if desired.
- 34. Plate the malfatti.
- 35. Sprinkle them with the remaining Parmesan.
- 36. Drizzle them with the butter.
