  1. 1. Bring four liters of salted water to a boil in a large pot.
  2. 2. Wash the broccoli thoroughly and separate the florets from the stem.
  3. 3. Peel the broccoli stem, remove woody parts, and cut it into small cubes.
  4. 4. Grate the Parmesan finely and set it aside.
  5. 5. Halve the onion, peel it, and dice it finely.
  6. 6. Rinse the turkey breast and pat it dry with kitchen paper.
  7. 7. Cut the meat into thin strips.
  8. 8. Heat oil in a frying pan over high heat.
  9. 9. Fry the turkey strips on all sides for about four minutes.
  10. 10. Season the meat to taste.
  11. 11. Remove the meat from the pan and place it on a plate.
  12. 12. Leave the pan with the frying fat in place and do not clean it.
  13. 13. Add the macaroni to the boiling salted water.
  14. 14. Cook the pasta over medium heat for about ten minutes.
  15. 15. Add the broccoli to the pasta water after six minutes of cooking time.
  16. 16. Cook the pasta and broccoli together until they are al dente.
  17. 17. Melt the butter in the frying fat of the pan over medium heat.
  18. 18. Add the diced onion to the pan.
  19. 19. Fry the onions for about two minutes.
  20. 20. Sprinkle the flour over the onions and stir it in.
  21. 21. Continue stirring until the butter and flour form a homogeneous paste.
  22. 22. Slowly pour the milk into the pan while stirring.
  23. 23. Add two ladles of the pasta cooking water to the sauce.
  24. 24. Bring the sauce to a boil.
  25. 25. Let the sauce simmer for about four minutes over low heat.
  26. 26. Drain the macaroni and broccoli.
  27. 27. Add the drained vegetables and the meat to the sauce.
  28. 28. Mix everything well together.
  29. 29. Season the sauce with salt, pepper, Herbs de Provence, and sugar.
  30. 30. Plate the macaroni with turkey and the sauce.
  31. 31. Sprinkle the dish with the grated Parmesan.
