🍽️ Makkaroni with Olive-Tomato Sauce and Oregano-Parmesan

Ingredients
- Zucchini 1 pc
- Olives, green 125 g
- Garlic cloves 1 pc
- Olive oil 1 tbsp
- Tomatoes, chopped 500 g
- Rose pepper Pinch
- Thyme, crumbled 1 g
- Macaroni 500 g
- Parmesan 20 g
- Oregano, dried 1 tsp
- Cream cheese, plain 200 g
- Salt Pinch
- Pepper, black ground Pinch
Instructions
- 1. Wash the zucchini thoroughly under running water.
- 2. Cut off the hard ends of the zucchini.
- 3. Split the zucchini in half lengthwise.
- 4. Slice the halves into thin half-moons.
- 5. Place the olives in a sieve and let them drain.
- 6. Pat the olives dry with a kitchen towel.
- 7. Chop the olives coarsely.
- 8. Peel the garlic.
- 9. Dice the garlic finely.
- 10. Pour about 5 liters of water into a large pot.
- 11. Salt the water generously.
- 12. Bring the salted water to a boil.
- 13. Heat 1 tablespoon of olive oil in a frying pan.
- 14. Set the heat to medium-high.
- 15. Fry the zucchini in the pan.
- 16. Add the diced garlic.
- 17. Add the chopped olives.
- 18. Fry the vegetables for about 5 minutes.
- 19. Add the chopped tomatoes to the pan.
- 20. Season the sauce with pepper.
- 21. Add paprika powder.
- 22. Sprinkle thyme over it.
- 23. Reduce the heat to low.
- 24. Let the sauce simmer for about 5 minutes.
- 25. Add the macaroni to the boiling salted water.
- 26. Cook the pasta for around 5 minutes.
- 27. Cook the pasta al dente (firm to the bite).
- 28. Reserve some cooking water in a cup.
- 29. Add the cooking water to the sauce if needed.
- 30. Grate the Parmesan finely.
- 31. Place the grated Parmesan in a bowl.
- 32. Add oregano to the bowl.
- 33. Add a pinch of pepper.
- 34. Mix the ingredients in the bowl.
- 35. Drain the macaroni.
- 36. Arrange the macaroni evenly on the plates.
- 37. Add cream cheese to the sauce.
- 38. Season the sauce with salt.
- 39. Season the sauce with pepper.
- 40. Pour the sauce over the pasta.
- 41. Sprinkle the macaroni with the oregano-parmesan mixture.
- 42. Serve the dish.
